Spaghetti Pizza Bagels

Yes, this is incredible and yes it is mind blowing. Spaghetti and pizza all in one meal served on top of amazing bagels with pepper jack cheese. I made spaghetti a couple nights ago and decided to use the leftovers for something meant for a Friday Night meal while watching the NBA Playoffs! Pizza and sports always go well together, but what about spaghetti pizza bagels and sports? I think so!

We always enjoy watching sports in our household but now that the Blazers have won 2 out of 2 in the beginning of the playoffs we can’t peel our eyes from the screen.

Ingredients:

  • 3 bagels
  • 6 slices of pepper jack cheese
  • Spaghetti Sauce (recipe here: http://bit.ly/1gASUMw)
  • 8 oz pepperoni slices

On a foil lined broiler pan open bagels

Top with Spaghetti sauce

Layer with pepper jack cheese

And top with pepperoni slices

bake at 400 for 4 minutes and broil another 1-2 (baking helps crisp the who bagel rather than only the top)

Serve with a fresh green salad to provide healthy roughage in the midst of the unhealthy. :)

 

 

Spaghetti Pie

Oh the greatest combination of lasagna and spaghetti all in one yummy dish. My sisters birthday is a week prior to my husbands. We did a joint dinner combing their favorite meals. My sister is a huge lasagna fan but my husbands lasagna recipe is by no means cheap; roughly $50. So, because we did dinner smack dab in the middle of valentines day and Michael’s birthday we decided to go for the more reasonable meal, spaghetti pie. :)

This recipe is quite easy and always a dinner favorite with company.

Ingredients:

  • 6 oz spaghetti
  • 2 tbsp butter
  • 1/3 cup grated parmesan cheese
  • 2 well beaten eggs
  • 1-16oz cottage cheese (2 cups)
  • 1 lb ground beef or pork sausage
  • ½ cup onions, chopped
  • 1-8oz can diced tomatoes
  • 1-6oz can tomato paste
  • 1 tsp sugar
  • Pinch of oregano
  • Pinch of garlic
  • Pinch of parsley
  • 1-2 cups shredded mozzarella cheese

Cook spaghetti according to package directions. Stir butter into hot, drained spaghetti. Beat the eggs well and add to pasta with parmesan cheese.

Form spaghetti mixture into 2 pie plates or 1-9×13 greased pans.

Spread cottage cheese on top of pasta.

Meanwhile, cook meat and onions until browned. (I added 1 tbsp of Montreal seasoning as I believe it gives great flavor to meat)

Stir in tomatoes, paste, sugar, oregano, garlic salt and parsley; heat through.

Pour on top of noodles and bake at 350 degrees for 20 minutes.

Sprinkle with mozzarella cheese.

Spaghetti Sauce

Homemade Spaghetti Sauce

There is nothing quite like homemade sauce!

I grew up with homemade spaghetti sauce. I’m not sure there was ever a time we had store bought. My mom cooked a lot and this was part of it. I remember a typical spaghetti night would include homemade bread and salad. My sister and I would always make a “spaghetti sandwich” where you take bread and top it with a large pile of spaghetti and somehow grip it with all ten fingers and manage to take a big ‘ol bite out of it. We were convinced it makes the spaghetti taste even better, though that seemed impossible, we believed in the possible. :)

My girlfriend told me she has never made her own sauce and to my dismay I was really shocked. She is pretty good at holding to no additives and preservatives that this comment really shocked me. Especially because it is super easy to make and can simmer all day long to deepen the flavors and smell the house with a delightful aroma for hours.

So since she informed me that she has never made her own sauce I thought I really needed to share the easiness to this delightful meal.

Ingredients:

  • 1 lb ground beef or turkey
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1-16oz can olives, chopped
  • 2-6oz can tomato paste
  • 1 can diced tomatoes
  • 2 cups water
  • 1 tbsp parsley
  • 2 tsp oregano
  • Dash of garlic salt
  • Salt and pepper to taste
  • ¾  tsp sugar (to taste, but add a little at a time as you can’t undo the sweetness)

In a pot cook onion, garlic and ground beef until no longer pink. Add olives, tomato paste, water and diced tomatoes.

Add seasoning at this point; if you are using fresh herbs add now. If you are using dried seasoning the trick is to place the dried seasoning into the palm of your hands and rub together. This reactivates the flavor in dried seasoning leaving the meal with more vibrant flavors. Stir well and let simmer on low for 2-4 hours.

When you are ready to eat, serve in a bowl or plate over pasta and with garlic bread and salad! Enjoy!
