Summer Sausage and Orzo

Chicken flavored orzo with summer sausage and fresh vegetables.

The great thing with orzo is not only the incredible taste but the simple fact that it can be cooked in so many ways with numerous ways to flavor it. I absolutely love orzo. Mmmm so delicious and versatile.

This particular night, I cooked the orzo in chicken broth leaving the pasta flavored so beautifully that nothing needed to be added to the pasta; not even butter.

This meal is less than 30 minutes and is a very inexpensive option to serve the family for dinner.

Ingredients:

  • 1 lb kielbasa sausage
  • 1 lb mushrooms, sliced
  • 1 small onion, diced
  • 4 tbsp butter
  • 1 tbsp minced garlic
  • Orzo
  • 1 tbsp Better than bullion chicken flavored
  • Vegetables of choice

Bring water to a boil, add chicken stock and orzo. Follow package instructions on how long to cook.

Meanwhile, slice sausage, onions and mushrooms. Set aside.

In a medium saucepan over medium heat, melt butter and add in minced garlic. Stir frequently to keep garlic from burning. Roast garlic for 2-3 minutes until fully cooked.

Keep the heat on medium and add in the onions and mushrooms. Continue to saute garlic mixture until onions and mushrooms are nice and tender.

Toss in sausage and heat through.

Serve with vegetables and orzo and enjoy.

Pineapple Bacon Sausage Sandwich

Oh how I absolutely love grill season. Especially now that I do not count on my husband anymore. “I can do it myself” I proudly think to myself. No more waiting around for him to get home from work; now I can have dinner prepared before he gets home. Yahoo!

I bought these sausages from Costco but you can purchase them pretty much anywhere. They are precooked and have sweet pineapple and juicy bacon wrapped inside them. This grilled juicy sausage leaves for a crispy outside with extreme juice flowing on the inside. Oh my goodness, is your mouth watering yet? Yummy yum yum!

Literally three ingredients is all you need. It is that easy. This meal is a 15 minute quick dinner (with the potatoes, 45 minutes).

From refrigerator to belly in a 25 minuets depending how quickly you gobble down your feast.

The simplicity of it all brings out the flavors of the sausage, leaving this goodness– plain and simple.

Serve on a ciabatta roll which makes this even more delicious.

So here’s the scoop:

Ingredients: 

  • 4 Sausages, defrost if necessary
  • 4 Ciabatta rolls
  • Smidgen of Mayo

Grill the sausage on BBQ- if weather appropriate. I wouldn’t want you all standing outside in the rain and snow to enjoy a delicious sausage sandwich. You could also broil in the oven, boil or microwave though I’m least partial to the ladder.

Lightly toast your ciabatta rolls on the grill (or oven) and spread with a little mayo.

Slice the sausage lengthwise and lay flat on your buns. :) Viola, that simple! Really it sounds very unexciting but a good sausage brings a lot of flavor to enjoy and not be disguised by multiple ingredients. It is really delectable.

Than…. sit on your back porch and enjoy a beautiful sunset. While I was up visiting family, this was a similar meal we had and this was the scenery I was able to gratefully partake in.

Bacon Wrapped Sausage

These bacon wrapped sausage dogs are making my mouth water as I simply sit to write out this recipe for all of you gracious people. This recipe even first thing in the morning will bring satisfaction to my palette. It’s a great meal for the warm summer heat surrounding your backyard and your barbecue with good family conversation while the kiddos play.

Ingredients:

  • 4 Italian Sausages
  • 8 slices of bacon
  • 2 cups mushrooms, sliced
  • 1/2 onion, diced
  • 1 tbsp minced garlic
  • 4 hot dog buns
  • Garlic butter

Turn your barbecue on and allow the heat to begin to smell your backyard and all across town making a statement that it is barbecue season and we are making delicious grub.

Wrap each sausage with two slices of bacon. Hold together with a toothpick if needed.

Meanwhile, saute mushrooms, onions and garlic until nice and tender. Set aside.

Prepare to grill the goodness.

Allow the juices to run off and sizzle the grill. Ohhh the smell of barbecue, oh how I love it.

When sausage is done, butter your buns with garlic butter and lightly toast on the grill.

Top each sausage with a portion of the mushroom mixture.

Served with grilled romaine hearts.

Quick Sausage

This is great for a snack, side dish or main course. My son, husband and I love sausage and often when I know he wont eat what I will be preparing for dinner, I think of other options that will be a hit and have a variety of protein and vegetables.

Ingredients: 

  • Sausage
  • Mushrooms
  • Onion
  • EVOO
  • Garlic Salt
  • Salt & Pepper

In a skillet, saute all ingredients until heated through and cooked.

Serve over rice as a main dish or simply serve as is for a side dish.

The Ultimate Breakfast Wrap

Happy breakfast time. I made these this past weekend and was overjoyed with the outcome. These suckers are amazing and has all the best ingredients a breakfast could hold.

This breakfast wrap is no typical breakfast wrap. It contains hash-brown links layered within your ooey gooey eggs and sausage! I love hash-browns and decided to combine all my favorite breakfast ingredients together into one perfect breakfast wrap.

Let me tell you….it was incredible and mess free and made my tummy very happy.

Ingredients:

  • Scrambled Eggs
  • 2-4 hash browns
  • Cheese
  • Sausage
  • 2-4 tortillas
  • Hot Sauce (optional)

In a fry pan, place your hash browns on medium heat to begin browning.

In a separate skillet, cook your scrambled eggs and add cheese.

On a heated tortilla, layer your cooked hash brown

And add sausage and eggs.

Add hot sauce if you so desire and roll up your tortilla into a burrito.

These suckers are deliciously filling and incredible. A mouthful of complete goodness. :)

Creamy Bacon and Chicken

This is a simple go to meal whenever you haven’t planned in advanced. I made this last week and it is ALWAYS a hit in our family. Simply place frozen chicken in the crockpot and begin to cook throughout the day with a little help along the way. :)

This was a day I had the kids and was extremely exhausted between the three little munchkins and planning for my dad and sons birthday get away. This meal couldn’t have been more appropriate.

Ingredients:

  • 3 chicken breasts (frozen works great)
  • 1 Italian Sausage Link (Bratwurst works great too)
  • 1 can cream of chicken
  • 1 cup sour cream
  • ½ lb bacon
  • Rice

In a crockpot place frozen chicken and sausage on medium-high heat for 1-2 hours. Once chicken has begun to thaw, season to desired taste.

Once fully cooked, remove meat from crockpot and slice into decent size chunks.

Return to crockpot.

Add cream of chicken soup and turn to low heat or if your crockpot has a “keep warm” button, use that.

1 hour before dinner, broil bacon until fully cooked and crisp. Cut bacon into medium chunks and stir into crockpot. I do this an hour or so before serving to help release the bacon flavor into the cream sauce.

Right before cooking, add in sour cream and mix well. Serve over rice.

Sausage and Rice

This thirty minute meal contains sausage, rice and shrimp. It’s almost too simple and I believe that this is why Cooper devours this meal and eats leftovers until it’s officially gone.

It’s a rarity in our house to find meals Cooper not only loves, but will eat again the next day. Makes life less complicated in one area at least. :)

Ingredients:

  • 1 Turkey Sausage (Johnsonville or alike)
  • 1 medium Red Pepper
  • 1 Medium Orange Pepper
  • 3 cups shrimp, tail off and devained
  • 4 cups Jasmine Rice, cooked
  • 5 TBSP butter
  • Garlic Salt

In a small skillet add sausage and 1 tbsp butter. Heat through.

In a separate skillet add shrimp and 2 Tbsp butter and garlic salt.

Cook until fully pink making sure not to over cook.

Once heated through set aside. Leave juice in skillet and saute vegetables in remaining juice.

I add rice and 2 TBSP butter to rice maker for additional flavor. I love my rice maker.

Pour sausage, vegetables and shrimp over rice. How easy is that?

Homemade Combination Pizza

I made one of the best pizzas the other night. Michael and I loved it. It was not a deep dish pizza but kind of. The crust was thick and moist with great flavor.

I must convince you all to make your own crust especially this recipe as you can freeze it and have it on hand for those nights you don’t have time for dinner or simply want a movie night with pizza and popcorn.

Baking your own crust is extremely healthy compared to all the pizza crusts out there and restaurants that add multiple ingredients and chemicals to get a desired taste. My recipe is easy, healthy and flavorful. It even has a sweetness in it from the honey. Get my crust recipe here: Pizza-Crust

Ingredients:

  • Already made pizza-crust, uncooked
  • ½ lb sausage
  • 9 oz pepperoni
  • Red sauce (I used Trader Joes Basil Parmesan pasta sauce)
  • Chopped olives
  • Sliced mushrooms
  • 1 medium onion, chopped
  • 3 cups cheese

Place risen pizza crust in a greased 9×13 pan. The dough should be firm enough that you can pick it up and mold it to the shape of your pan.

Top with red sauce.

Sprinkle sauce with 1 cup cheese and pepperoni.

Meanwhile cook sausage until fully cooked.

Spread on top of pepperoni.

Add olives, mushrooms and *onions.

*If you have a couple extra minutes sauté onions with 1 tsp sugar to caramelize and give added flavor. This simple step changes the taste entirely. :)

Bake at 425 for 18-20 minutes or until crust is fully cooked in the middle of the pan.

Enjoy with a good fresh salad to get your vegetable serving in for the day and to make yourself feel good about your dinner choice with your healthy crust.

Egg Casserole Comfort Food

This recipe is the ultimate comfort food recipe out there. It makes a very full 9×13 pan leaving you with plenty of leftovers and trust me, you will want the leftovers. I made this the other night for dinner although it is a breakfast treat. My husband was questioning the “casserole” look as I was plopping it into the oven. Once serving this hot dish he came back for seconds leaving him in a food coma as well as a food baby. :)

This is the best breakfast brunch casserole for guests and works fabulously for dinner as well.

Ingredients:

  • 1 lb bag of hash browns, uncooked
  • 1 lb spicy Italian sausage
  • 12 eggs, scrambled
  • 4 tbsp cream cheese
  • 1 onion, chopped
  • 1 can cream of mushroom soup
  • 1 can green chilies (optional)
  • 1 ½ cups sour cream
  • 1-2 cups cheese, shredded

In a greased 9×13 casserole pan, spread hash browns evenly throughout.

Scramble eggs and cream cheese together to add a creamy texture to the eggs. Mmmm good! :) Layer on top of hash browns.

Meanwhile, cook the meat and onions until done. (Season to your liking)

Once the meat is cooked, spread on top of the hash browns.

In a small bowl combine the cream of mushroom soup and sour cream, mix well. Spread on top of the sausage layer. (If using green chilies, add now)

Bake at 375 for 20-25 minutes or until heated through. Sprinkle cheese on top and broil for 1-2 minutes.

May serve with fruit or eat alone! :)

This meal is great to serve guests or take to a brunch. This dish can be made in advance or placed in the freezer for a later date. If freezing, compile all ingredients together as listed above and freeze before baking. When ready to bake, remove from the freezer and allow to thaw completely before cooking.

Biscuits and Gravy

If you have been paying attention lately, I have been on a breakfast/brunch kick the last couple weeks. I never make biscuits and gravy but this past week I have been craving them. I’ve been eating fruit and comfort food; resembles my pregnancy. ;)

Homemade gravy is super duper easy.

Ingredients:

  • 1 lb sausage (I used spicy)
  • ½ cup plus 2 tbsp unbleached flour
  • ½ cup half & half
  • 3 cups milk (I used whole)
  • Garlic salt
  • Dash of salt and Pepper
  • 1 tbsp parsley
  • 2 tsp chicken bouillon
  • Buttermilk biscuits

Directions:

In a large sauce pan cook sausage until no longer pink.

Add flour and stir well. (Adding flour prior to milk prevents lumps)

Add half and half and milk and mix thoroughly. Add seasonings and bouillon and simmer on low heat to thicken up.

Cook biscuits according to package instructions or make your own.

Serve with scrambled eggs!!

This dinner fit my fancy really well tonight. It was flavored with a swift kick from the spicy sausage and was definitely filling. I learned how to make incredible scrambled eggs from my mom as she teaches me many tips and tricks that add much flavor and desire than the standard “recipes.”
