Mini Pizza

I used to be a horrible morning person. All growing up I could never get up in time for school. My dad would come in on a bright sunny morning with extreme excitement in his voice. “Honey, it snowed last night!” I would try and process which season we were in, whether I should be excited or simply the sad reality that what my dad just shared was absurd. It was summer, 70 degrees by 7 am and my dad is trying to get me out of bed with snowflakes.

When that approach turned out to be anything but successful, he would often take a running shot at my bed and plummet down directly on me. “Wake up, isn’t it a beautiful day?!” This would often make me so mad that this grown man is jumping on my sleeping, lifeless body to somehow muster up some excitement to come running from the room? It made no sense to me, what was to wonderful to quickly wake up when sleeping was my number one friend.

Oh my poor dad. I look back and contemplate how he survived with three daughters, not how we survived. We were blessed and taken care of immensely with a wonderful Father who even though couldn’t get his girls up in the morning, taught us everything else we needed to know about life. :)

As I’ve grown, the morning side hasn’t really left me. Loving my sleep and late nights was a usual for me until I had my son……boy was that an eye opener for me. I have adapted extremely well which requires me to be in bed by 9:30. :) Although he’s a great sleeper, I can’t seem to catch up on years of lost sleep while chasing a toddler around.

So with the early morning routine, I am often up by 6:30 and not because little man is up by then, but because it allows me to get some stuff done before the day truly begins. Which is an easy prompt for early bedtime. Never sitting until touching foot in bed to read and let my mind rest, is a long awaited pleasure all day long.

This night in particular, Michael was out with some buddies and I was watching a movie. My tummy began to rumble and even though I had dinner (an hour ago), I was hungry. I decided to make a yummy little pizza on english muffins. It was probably 9:30 when I turned the oven on. My mind was telling me this would be great, while my tummy was telling me don’t even think about it….my mind won that battle.

After eating these delicious little pizza snacks, my tummy paid for it all night long. 

Ingredients:

  • Butter
  • Garlic salt
  • Pepperoni
  • Cheese
  • Fresh Basil

I reverted to a heaping hand of butter with a generous amount of garlic salt. Topping with pepperoni and cheese and then toasting them lightly in the oven.

Using a generous portion of garlic and butter creates something worth devouring. This late night snack was incredible with a nice touch of basil to flow with the flavors, but my advice would be…”Do not eat it too late!” :)

Something so simple but so garlicy and buttery was a wonderful moment to devour.

Pizza Pockets

“WHAT??” Pizza pockets are incredible but when you buy them from the store you probably are eating 50 delicious ingredients that may not be so delicious for your body. I love a good pizza pocket and they will forever remind me of driving to Central Washington with my sister. We used to drive the long drive and stop at the half way point at a truck stop. This truck stop had the best pizza pockets to date. I don’t know how to express the incrediblness (not that that is a word) of this pocket without you actually trying it. You may be asking, how can a pizza pocket actually be delicious when it comes from a truck stop? Well, let me tell you. “It is the best I’ve ever had!!!” I’m confident my sister could verify that. :)

My sister called me on her drive to visit my parents a few weeks ago as she stopped to embark on this incredible pocket. She was reminding me of our journey together, years past. It’s probably been about 4-5 years since I actually have had it! I miss them, oh do I miss them.

Today I made a delicious pizza pocket but considering I do not hold a truck stop at my house, they are nothing alike, but they are worth making. :)

Ingredients:

  • Pizza Crust or Pie Crust (Homemade or store bought)
  • Pepperoni
  • Cheese
  • Onion, finely minced
  • Salami
  • Olives (optional)

For the crust, follow the instructions for preparation on the link above.

Preheat oven to 400 degrees. Once the crust is made, roll dough out onto a floured surface into a rectangle.

Slice dough into rectangles.

Top with cheese

Pepperoni, salami, onions or any additional toppings.

Once you’ve added all your toppings, fold over and begin to braid the edges to hold together.

Place on a greased foil lined baking sheet.

IMG_4685Bake at 400 degrees for 11-15 minutes or until lightly brown.

Cool on a wire rack.

Serve as a delicious snack with blackberry lemonade. :)

OR make additional and individually wrap and freeze. Place in toaster oven when ready to eat until nice and crispy. :) My husband loves these as snacks in his lunch.

Gorgonzola Pecan Chicken Pizza

That’s right ladies, I just said Gorgonzola Pecan Chicken pizza with a delicious garlic cream sauce. This pizza is deliciously “gourmet” but it is definitely Delightfully Doable. 

My husband and I were going to take Cooper to the park after he got off work on Friday but due to his tardiness we opted for a long walk to the store and back to rent a movie. Cooper has been begging for walks on a daily basis so we take advantage of it as much as we can. We were going to pack a picnic and eat at the park and while that didn’t happen, my husband was still very pleased with the pizza I had made. He said he would eat that everyday because it’s that good. I was very pleased with his response to this dish.

Ingredients:

  • 1 chicken breasts, chopped
  • Paprika
  • Garlic Salt
  • 1 tsp taco seasoning (optional)
  • 4 oz cream cheese
  • 2-3 cups milk
  • 2 tbsp minced garlic
  • 1-2 tbsp flour
  • ½ cup pecans, chopped
  • ¼ cup chives, chopped
  • Crust- homemade or store bought

Preheat oven to 375 degrees. Season raw chicken breast with paprika, garlic salt and taco seasoning. Bake for 15-20 minutes or until juices run clear.

Once chicken is cooked, turn oven to 425 degrees.

Meanwhile, add garlic and cream cheese to sauce pan and begin to melt on low heat.

While garlic is cooking and cream cheese is melting add in butter.

Heat until fully melted on low heat still.

In a separate bowl combine 1/2 cup milk with flour and whisk until no lumps are found. Add flour mixture and remaining milk to cream cheese and heat on med-low heat until mixture begins to thicken.

If mixture is too thick, add a little more milk. If mixture is too runny, repeat the whisking of flour in a separate bowl to prevent lumps. It will thicken as it continues to heat through, so make sure not to add too much flour.

Once thickened, add in Gorgonzola cheese and stir.

Chop chicken.

Add chicken to cream sauce and heat through.

In a large 9×13 greased baking dish, add pizza crust (for homemade, follow this recipe)

Top with chicken cream sauce. Add chopped pecans, chives and sprinkle with additional Gorgonzola cheese.

Bake at 425 degrees for 20-30 minutes or until golden brown.

Enjoy with a fresh garden salad!

Spaghetti Pizza Bagels

Yes, this is incredible and yes it is mind blowing. Spaghetti and pizza all in one meal served on top of amazing bagels with pepper jack cheese. I made spaghetti a couple nights ago and decided to use the leftovers for something meant for a Friday Night meal while watching the NBA Playoffs! Pizza and sports always go well together, but what about spaghetti pizza bagels and sports? I think so!

We always enjoy watching sports in our household but now that the Blazers have won 2 out of 2 in the beginning of the playoffs we can’t peel our eyes from the screen.

Ingredients:

  • 3 bagels
  • 6 slices of pepper jack cheese
  • Spaghetti Sauce (recipe here: http://bit.ly/1gASUMw)
  • 8 oz pepperoni slices

On a foil lined broiler pan open bagels

Top with Spaghetti sauce

Layer with pepper jack cheese

And top with pepperoni slices

bake at 400 for 4 minutes and broil another 1-2 (baking helps crisp the who bagel rather than only the top)

Serve with a fresh green salad to provide healthy roughage in the midst of the unhealthy. :)

 

 

Pizza Crust

No fail pizza dough. Easy to make and great to make extra and freeze for your next pizza night.

Ingredients:

  • 1 cup warm water
  • 2 ¼ teaspoons active dry yeast
  • 1 tablespoon honey (or sugar)
  • 2 teaspoons salt
  • 2 tablespoons olive oil (or vegetable)
  • 3 cups bread flour (give or take ½ cup)

In a stand mixer add yeast and honey into warm water.

Let sit for 2-3 minutes or until bubbles form and mixture starts to foam.image

Pour in salt, oil and 2 cups flour, mix well. Once that flour is incorporated, start adding flour in bit by bit until you get the pizza dough to the consistency you want: slightly tacky, but when you touch it, it doesn’t stick to your hands.

Mixture needs to be more firm

Knead for 6 minutes on medium speed. The dough should be smooth and eas to work with. And the bowl should be clean!

Lightly grease a large bowl & the dough so it doesn’t stick to the edges or get too dry and cover with tea towel, let it rise 1 hour or until doubled in size.

**If freezing the dough do so before letting it rise. Place into an airtight Ziploc bag. When you are ready to use it, take out of freezer and let it thaw at room temperature. Once thawed, place into a greased bowl and let rise. Can take a total of 6-8 hours.

Place dough in a greased 9×13 pan.

Preheat oven to 425 degrees and top to your liking. Bake for 20-30 minutes until lightly brown and fully cooked.
