Cinnamon Nut Oatmeal

Often we eat eggs for breakfast but on the days where my son eats very little, I try and spice up the calorie intake for him with protein and nuts. A good hearty breakfast is important for our bodies. We often do not start our days off in a correct manner with a well-rounded breakfast. I’ve noticed on days such as today when we are rushing out the door and all I eat is a granola bar for breakfast, I tend to get a migraine a couple of hours later. I have trained my body to eat a healthy breakfast and when it doesn’t receive this, my body simply gets mad at me and puts me down with a migraine. Literally putting me down. :( This sad state needs to end and it all began because of a lack of nutrients for breakfast. It’s important to eat breakfast even if you aren’t a “morning” person. You can train yourself to eat good food and not a lot of it to stay healthier.

Enough of my bossy mom instincts telling you as if you are my child, to eat your breakfast. You all know I love you deeply right?

Anyway, as of lately my son has been into watching the movie Cars. He hates TV otherwise. So our morning routine begins with him snuggling on the couch watching cars while I prepare breakfast. This has been a great way to feed him and actually get him to consume calories as well as him allowing my to snuggle my sweet baby. I’m not sure if it’s the distraction from watching the movie or the comfort of sitting on the couch all snuggled up rather then at the table. In either case, he has his whole life to sit at the table and I will take every opportunity to stuff his body full of calories since it’s almost impossible to keep the pounds on this little rascal.

Today’s breakfast of choice: Cinnamon Nut Oatmeal

Ingredients:

  • 1/2 cup oats
  • 1 tsp cinnamon
  • 1 tbsp brown sugar
  • 1 tbsp dried cranberries
  • 2 tbsp pecans, almond, walnuts
  • 1/4 cup milk

Prepare oats according to package instructions.

In a small bowl add oatmeal and sprinkle with cinnamon. Mix together.

Top with brown sugar, cranberries and nuts.

Drizzle with Milk.

Devour and feel satisfied.

Blueberry Oatmeal Scones

I made these scones today while I also made Banana-Crumb-Muffins. I haven’t baked in awhile and knew I was well overdo. I knew my parents were coming into town this weekend as well as visiting my mother-in-law who is sick with terminal cancer. I thought it would be nice to share the food-wealth and make some tasty food for them and my parents. I decided to make Creamy Enchiladas, scones, and muffins. Although I had cheddar English muffins on my list, I didn’t quite get around to those yet.

I had a recipe for scones from my mom and since you already know I love my carbs I decided blueberry scones would be a great fit as we are all coffee lovers and pastries for some reason couldn’t go any better than with a good cup of coffee.

These scones are simple and not too time consuming as you see I already made muffins prior to these! :)

Blueberry Oatmeal Scones:

  • 3 cups + 2 tbsp flour
  • ½ cup + 2 tbsp sugar
  • 1 ¼ tsp salt
  • 1 ¼ tsp baking soda
  • 2 ½ tsp baking powder
  • 10 oz (2 ½ sticks) cold butter
  • 2 cups oats
  • 2 tsp orange zest (optional)
  • ¾ cups buttermilk
  • ¾ cup dried blueberries (fresh/frozen work too)
  • ½ cup pecans, chopped (optional)

Preheat oven to 350.

Combine everything EXCEPT oats, buttermilk, blueberries, and pecans.

Beat well until butter forms small pea size pebbles in the mixture.

Add oats and continue to mix.

Slowly pour in buttermilk just until dough comes together. Do not over mix.

Divide dough in half and place on a floured surface. With both hands, form dough into a mounded circle. (A little higher in the middle than the edges)

Cut dough into 8 triangles (repeat with the remaining dough)

Place on a greased baking sheet and bake for 20 minutes or until light brown.

Serve warm with butter and/or jelly!

Coopie Bites

Coopie Bites were created by the Cook Clan. We have had Aussie bites from Costco and their energy bars as well. Basically I wanted to create a clean mixture between the two and came up with these. The name came from my husband. I must proudly give him 100% credit for the name. :) Cooper LOVES Aussie bites from Costco so we had to incorporate him into the name of course.

Directly on the packaging for Aussie bites it states: honey, cranberries, sunflower seeds, canola oil, and flax seed. Basically I took exactly that and added flour and eggs to keep them together. I have made these a few times trying to get the amounts perfect. Today I felt pretty confident that the amounts I had were good as I ate two Coopie bites straight from the oven. :)

Dry Ingredients:

  • 3 ½ cups oats
  • 1 ½ cup branflakes
  • 1 1/3 cup oat flour (may use all purpose)
  • ¾ cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup coconut
  • ½ cup flax seed
  • ½ cup cranberries (dried blueberries or apricots work as well)
  • ½ cup nuts; sunflower, almonds, pecans any or all work great

Mix together in a large bowl; set aside.

Wet Ingredients:

  • 1 cup honey
  • 1 cup Canola oil (may use coconut)
  • 3 eggs
  • 2 tsp vanilla

Mix all wet ingredients in a stand mixer. Add dry ingredients a little at a time. Make sure it’s well incorporated.

Preheat oven to 375 degrees. Grease a 9×13 pan and spread entire ingredients into the pan and bake for 18-20 minutes. Allow to cool.

Once cooled cut them into small bites as they are a great snack or energy bar for breakfast or before a workout.
