Pan Fried Mahi

In desperate need of a last minute meal idea??? Here’s a quick, healthy option.

I decided the other night I had waited to long to begin dinner and BBQ’ing was out of the question. My son need to eat and eat now, as it was his bedtime. Opps, I was slacking on my bedtime routine with him and let us play outside for way longer than recommended. :)

Tonight’s menu: Pan fried Mahi, sausage, salad and rice. Easy, simple and good for you!

Ingredients:

  • Mahi (Or any fish you prefer)
  • Dill
  • Butter
  • EVOO
  • Garlic Salt
  • Sea Salt

In a skillet, add butter and a titch of EVOO. Begin to heat on medium-low heat. Add Mahi

Sprinkle Mahi with seasoning and cook for 3-5 minutes than flip.

When fish flakes apart, your mahi is finished cooking. Do not over cook. You want your fish to be flaky for best results.

Serve with salad and rice with the option of delicious sausage as a side.

Backyard BBQ Mahi

This backyard BBQ Mahi adds a little taste of sweet and spicy. We love Mahi in our household especially because we buy it from Costco with individually wrapped fillets.

I’m all about healthy, quick and easy clean up. :)

Ingredients:

  • 4 Mahi Fillets
  • 4 tbsp butter
  • 1 tbsp Backyard BBQ seasoning
  • 1 tsp paprika
  • Dash of garlic salt

On a foil lined broiler pan, place fillets with seasoning sprinkled evenly amongst the four fillets. Place 1 tbsp butter on each fillet.

Bake at 375 degrees and cook for 8-10 minutes or until flaky.

Serve with rice and vegetables.

Grilled Mahi and Corn on the Cob

Grilled Mahi and Corn on the Cob. Easy, delicious, healthy and most of all…..easy clean up.

I’ve become quite the grill master lately and have really enjoyed it. Makes your food taste great and is easier than I had expected.

This is a meal the whole family with love, as you can see, my little boy loves it as well. :)

Ingredients:

  • 4 Mahi fillets
  • 4 Corn on the cob, shucked
  • 1 White or Yellow Onion, sliced
  • Dill
  • Garlic Salt
  • Salt & Pepper
  • EVOO
  • Butter

As you can see I didn’t give exact measurements for the seasoning. I prefer to do seasoning to desired preference. Also, depending on the size of the fillet you may want a little more or a little less. :)

For easy clean up I wrap each corn and fillet individually in foil to allow for the flavors to seep in and stay concentrated.

Sprinkle corn with salt, pepper and garlic salt. Top with a chunk of butter and sprinkle with EVOO.

Fold foil up in somewhat of a dome. This will give easy access to check and see if the corn is done without losing all your juices.

Slice onion and sprinkle seasoning on top of Mahi. Lay onion on top and drizzle with EVOO and chunks of butter. Fold up into a dome.

Grill corn first as it will take significantly longer. Once corn is half way grilled begin cooking the fish for 5-8 minutes (depending on size) making sure not to overcook. You will want the fish to be flaky, this means it is done and not over cooked or under cooked.

Once done, open up and enjoy the aroma and enjoy this luscious, healthy meal.

Foil Baked Mahi & Mac N Cheese

Wondering what to have for dinner tonight? Well tonight’s dinner is foil baked Mahi Mahi with a sweet glaze, homemade macaroni n cheese with sautéed veggies.

The mac n cheese I made actually wasn’t my true mac n cheese. I made noodles the other night for Cooper to have with his dinner and decided to use the remainder of them tonight. I simply added parmesan cheese, shredded American, Colby and sharp cheese. Simple and delicious.

Foil baked Mahi is one of the better ways to cook this fish as it can tend to dry out pretty easily if slightly over baked or under baked. Not the easiest to cook or shall I say I’m not the best fish baker. :)

Ingredients:

Mahi Foil Bake

  • Mahi Mahi
  • 1 Sliced onion
  • 4 tbsp fresh chopped cilantro
  • 4 tbsp butter
  • Prickly pear marmalade (any jam or glaze will work)

Place thawed mahi on a piece of foil and layer with above ingredients.

Fold foil up to help hold juices in.

Bake at 400 degrees for 15-20 minutes or until no longer pink

Mac N’ Cheese

  • 3 cups cooked Elbow Macaroni
  • 2 cups shredded cheese blend
  • 1 cup parmesan cheese
  • 3 tbsps butter
  • Salt and Pepper to taste

Cook Macaroni according to package instructions. Add butter and cheese and mix well. Add dash of salt and pepper to taste. Pretty simple for a side dish.

Sautéed Veggie Mix

  • 1 cup chopped Brussels Sprouts
  • 1 cup chopped red, orange, and yellow peppers
  • 1 chopped onion
  • ½ cup chopped chorizo
  • Evoo
  • Salt and Pepper to taste

In a fry pan sauté vegetables until crisp and too perfection. Overcooking is easy to do and also sucks all the nutrients out of them as well. No one enjoys soft and mushy vegetables.

When you begin to cook them remember to not over stir. Fry for 4 minutes on med-low heat, toss vegetables and fry another 4 minutes. This will help glaze vegetables with a slight crispy bite. Not to hard, not to soft.
