Breakfast Egg Muffins

Hello happy child! I not only got a picture of him laughing, but also looking at me! Yahoo! Mission accomplished!

IMG_6817This morning we went on a family hike and ended at Vivace’s in northwest 23rd for crepes and coffee.

Cooper was attempting to fill up his little truck with cheerios and take them to the “dump” AKA his mouth! (This was taught by his daddy…no surprise there)

As usual I pack Michael a lunch every day because it’s so easy to waste hundreds of dollars a month on eating out. This is a money saver folks.

Since he leaves so early in the morning I send him with breakfast, lunch and snacks to partake in all day long.

This mornings breakfast of choice was egg muffins full of delicious meat and veggies to fill his tummy. I choose this meal because it looks hard but this is exactly the opposite and that my friends, is why I made it. I was tired from the weekend and all the activities we did so this was perfect. It makes enough to send him with 3-4 breakfast’s depending on how many Cooper and I eat. :)

So lets get into it.

Ingredients:

  • 8 eggs
  • 1 1/2 cups milk
  • 1 tsp garlic salt
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • Dash of sea salt
  • Freshly ground pepper
  • 1 cup ham, diced
  • 1/4 cup tomatoes, chopped
  • 1/2 cup cheese, shredded

In a medium bowl crack the eggs. Whisk very well. 1 minute by hand.

Add in seasoning.

After whisking the seasoning in, add ham and tomatoes (any vegetables work).

Line a muffin tin with muffin cups or oil and fill 3/4 full.

Cook at 375 degrees for 15-20 minutes or until the middle does not jiggle. :)

Remove immediately IF you greased with oil and opted out of the muffin liners. This helps them come out easier. Otherwise, let cool on a wire rack.

The Ultimate Breakfast Wrap

Happy breakfast time. I made these this past weekend and was overjoyed with the outcome. These suckers are amazing and has all the best ingredients a breakfast could hold.

This breakfast wrap is no typical breakfast wrap. It contains hash-brown links layered within your ooey gooey eggs and sausage! I love hash-browns and decided to combine all my favorite breakfast ingredients together into one perfect breakfast wrap.

Let me tell you….it was incredible and mess free and made my tummy very happy.

Ingredients:

  • Scrambled Eggs
  • 2-4 hash browns
  • Cheese
  • Sausage
  • 2-4 tortillas
  • Hot Sauce (optional)

In a fry pan, place your hash browns on medium heat to begin browning.

In a separate skillet, cook your scrambled eggs and add cheese.

On a heated tortilla, layer your cooked hash brown

And add sausage and eggs.

Add hot sauce if you so desire and roll up your tortilla into a burrito.

These suckers are deliciously filling and incredible. A mouthful of complete goodness. :)

Best Scrambled Eggs To Date

Scrambled eggs can be manipulated in one too many ways. It kind of grosses me out. While we were in Bend, OR a couple weeks ago, the hotel we stayed at had breakfast. Mind you, their breakfast was actually really good and filled with multiple options to choose from. Apart from the usual mass produced plastic tasting scrambled eggs, I thoroughly enjoyed everything else. I find anytime you travel, the scrambled eggs are a “must RUN” dish. Don’t touch, don’t eat, don’t even try! They always let you down.

Isn’t it crazy how scrambling eggs can bring out the best and the worst of an egg? I’ve found that it is almost too easy to make them different each time. My husband is the type who likes to constantly stir the egg and mash it into the smallest pieces known to man. He loves to stir those puppies and stir and stir. I found that over stirring will keep Cooper from touching the egg. :) I will give my husband the benefit of the doubt and say, I do make eggs every day for Cooper, so he’s just used to my chunky, cheesy, ooey goodness of an egg. ;)

I will give all the credit to my mama who taught me many tips and tricks in the kitchen. She is a fabulous cook and always had the best eggs growing up and I’ve now brought them to my abode. The key to our scrambled eggs is not, I repeat, NOT to over stir.

Ingredients: 

  • 2-3 tbsp butter
  • 8-10 eggs (serves 5-6 people)
  • 3 tbsp cream cheese
  • 1- 1 1/2 cups shredded cheese
  • Salt & pepper to taste
  • (Patience) :)

In a medium size skillet greased with 2-3 tbsp butter, crack your eggs over med-low heat. Let them sit until they look like this. (break the yoke)

Using a spatula light scrap the bottom of the pan to “stir” them. Leave in large chunks.

IMG_5200 Add in chunks of cream cheese and shredded cheese. (This pictures shows sliced cheese)

Give it one last stir. If you feel it needs to cook through a little longer, give it a couple good stirs without chopping your eggs into tiny pieces. :) IMG_5203

Serve with toast and sausage or in a breakfast sandwich.

I  found great pleasure when the little gal I nannied for said she HATED eggs but once she took a bite of mine she proudly stood and said “these are the best eggs in the WHOOOOLLLLEEE world.” I was very honored that a 5 year old would be so complimentary towards my eggs that were previously looked down upon. She enjoyed them so much she asked for my scrambled eggs for her birthday breakfast. Needless to say, her mom “took a lesson” on scrambling eggs. :)

How to Hard Boil Eggs

How to hard boil eggs.

I didn’t realize that it can be a struggle to peel the shell and not have the yoke fully cooked. After talking with a friend, I decided to share my little secret for the perfect hard boiled egg. No problems peeling and no under cooked egg.

I didn’t realize you could actually buy pre-boiled eggs from Costco. I was actually shocked when I heard this and figured it was time to share these simple directions as I boil eggs weekly for snacks throughout the week.

As I was talking with her, she explained that she can never get the eggs just right; a little too soft or too difficult to peel.

So… here ya go. The no fail hard boiled eggs. If you follow these directions you shouldn’t have any problem peeling the shell. I haven’t and would be surprised if you did.

In a large pot place cold eggs. Use COLD water, enough to cover the eggs. (This will keep them from cracking)

Once boiling, turn off heat, cover and set the time for 13 minutes. (Leave the pot on the hot burner)

When timer goes off, rinse with cold water and place in the refrigerator.

Steak and Egg Burritos

We made steak the other night and had leftovers. I was able to get 2 leftover meals after all we ate the first night. The first left over meal was Steak sandwiches on Ciabatta rolls with a delicious spread. Yesterday I decided I would make steak and egg breakfast burritos as steak goes insanely great with eggs.

This simple yet delicious meal was a great way to end my leftovers of steak.

Ingredients:

  • Steak, chopped
  • 5 eggs
  • ¾ cup chopped mushrooms
  • ½ cup shredded cheese
  • ½ cup spinach
  • Garlic salt
  • Salt and pepper to taste
  • 4 Tortillas

In a skillet begin to cook your eggs. Once cooked partially add mushrooms as they take longer to cook.

When almost fully cooked add cheese and seasonings. Do not over stir the eggs; keep them chunky.

Heat tortillas for 7 seconds in microwave or use at room temperature to keep the tortillas from splitting.

Divide mixture between the four tortillas and wrap up. :)

Avocado Fried Egg

Avocado fried eggs are incredible. I saw I picture of an avocado with an egg inside. “Brilliant” I thought to myself. I filled the center full of eggs and baked them to perfection. I topped them with a beautiful kale and roma tomato garnish.

Avocado Fried Eggs:

  • 4 avocados
  • 4 eggs
  • ¾ cup chopped roma tomatoes
  • 1 cup chopped kale
  • Dash of EVOO
  • Dash of Salt and Pepper

Split and pit avocados and place in a greased 8×8 baking dish. Break avocado a titch to allow a bigger hole for the egg and scoop egg into center.

Bake at 400 degrees for 10-15 minutes depending on your preference of cooked egg. Turn to broil and broil for 1 minute until the top browns slightly.

Meanwhile chop roma tomatoes and kale and mix with evoo, salt and pepper. Top Avocado fried eggs with this garnish and serve with hash browns and toasted English Muffin Bread.
