Chicken Casserole

Chicken Casserole in less than 30 minutes. From mixing to baking you can serve your family incredibly quick and with delicious flavor the WHOLE family will love!

I made this in one of my rushed evenings lately and was thoroughly happy with the outcome. My whole family loved it and we all enjoyed the leftovers as well!

Ingredients:

  • 2 cans of Pillsbury Biscuits
  • 2 cans Chicken (or 2 chicken breasts)
  • 1 can cream of chicken soup
  • 1 cup mayo
  • 2 tsp garlic salt
  • 1 tsp salt
  • 2 tsp black pepper
  • 1 cup milk
  • 1 can diced olives
  • 1 cup shredded cheese

Preheat oven to 375 and split biscuits in half as shown below.

In a greased 9×13 baking pan, lay the biscuits close together, covering the entire bottom of dish. (reserve left overs)

Meanwhile, mix together all remaining ingredients and lay on top of the biscuits.

Top casserole with the reserve biscuits and bake at 375 degrees for 20-25 minutes or until biscuits are fully cooked.

Since this recipe is comfort food, I choose to steam some vegetables and get some yummy nutrients that way. :) It is actually an incredible recipe, my husband and I ate as usual, almost half the pan. Cooper, being the picky eater that he is, also loved this recipe. He usually hates his food mixed together and prefers plain food without cream sauce but tonight, he was loving this recipe and made his mama proud!

Don’t judge by the look of it, it has amazing flavor and is a really easy recipe to conquer!

Meatball Buns

Meatball buns are a great appetizer for a party or simply for a delicious snack. They are incredibly easy and VIOLA you have a tasty treat. My son loves them as well! :)

Ingredients:

  • Pillsbury Biscuits
  • String Cheese
  • Frozen Meatballs

On a greased cookie sheet separate the biscuits in half (they are took thick if you leave them whole)

Place meatball in the middle

Top with cheese and fold up.

Bake in the oven at 375 for 15-20 minutes until fully cooked.

Enjoy warm with a side of marinara or by themselves. :)

Biscuits and Gravy

If you have been paying attention lately, I have been on a breakfast/brunch kick the last couple weeks. I never make biscuits and gravy but this past week I have been craving them. I’ve been eating fruit and comfort food; resembles my pregnancy. ;)

Homemade gravy is super duper easy.

Ingredients:

  • 1 lb sausage (I used spicy)
  • ½ cup plus 2 tbsp unbleached flour
  • ½ cup half & half
  • 3 cups milk (I used whole)
  • Garlic salt
  • Dash of salt and Pepper
  • 1 tbsp parsley
  • 2 tsp chicken bouillon
  • Buttermilk biscuits

Directions:

In a large sauce pan cook sausage until no longer pink.

Add flour and stir well. (Adding flour prior to milk prevents lumps)

Add half and half and milk and mix thoroughly. Add seasonings and bouillon and simmer on low heat to thicken up.

Cook biscuits according to package instructions or make your own.

Serve with scrambled eggs!!

This dinner fit my fancy really well tonight. It was flavored with a swift kick from the spicy sausage and was definitely filling. I learned how to make incredible scrambled eggs from my mom as she teaches me many tips and tricks that add much flavor and desire than the standard “recipes.”
