How To: Keep Your Bacon From Shrinking

“Bacon Bacon Whose Got The Bacon?” Are you looking for your bacon? Did you cook a pound of little piggies only to be left with 1/4 pound? Does your bacon disappear in the oven and shrivel up to nothingness? Are you scrounging around wondering what just happened?

How does that work? Prior to cooking, you gaze at the longest slice of bacon known to man and you simply could not wait to get your hands on that little piggy. Post cooking that little piggy, you find yourself questioning your piggy and where it ran off to.

For years I have cooked bacon and felt like all that remained was a pile of grease with a couple crispy crumbs. Is there a bacon cure? Can this puzzle be solved? Is the mystery thief losing this bacon battle?

Never again will you wonder where your bacon thief came from and why he ate 90% of your delicious bacon.

No more bacon thief.

How to:

Lay bacon on a foil lined baking sheet or broiler pan.

Douse your bacon with water using a squirt bottle. Literally douse it. This will help keep your bacon in tacked and will help keep the grease from shriveling up your bacon-ater.

Bake at 450 for 10-12 minutes**

**Note: If you like your bacon crispy, turn the broiler on and broil for 1-2 minutes after baking for 10 minutes.

You will be so happy to see that all your money is saved when you go to eat your bacon; half the package wont be missing.

“Move over bacon something meatier’s coming in!”

And that my friends, is your cure to shriveled up bacon!

Bacon Wrapped Sausage

These bacon wrapped sausage dogs are making my mouth water as I simply sit to write out this recipe for all of you gracious people. This recipe even first thing in the morning will bring satisfaction to my palette. It’s a great meal for the warm summer heat surrounding your backyard and your barbecue with good family conversation while the kiddos play.

Ingredients:

  • 4 Italian Sausages
  • 8 slices of bacon
  • 2 cups mushrooms, sliced
  • 1/2 onion, diced
  • 1 tbsp minced garlic
  • 4 hot dog buns
  • Garlic butter

Turn your barbecue on and allow the heat to begin to smell your backyard and all across town making a statement that it is barbecue season and we are making delicious grub.

Wrap each sausage with two slices of bacon. Hold together with a toothpick if needed.

Meanwhile, saute mushrooms, onions and garlic until nice and tender. Set aside.

Prepare to grill the goodness.

Allow the juices to run off and sizzle the grill. Ohhh the smell of barbecue, oh how I love it.

When sausage is done, butter your buns with garlic butter and lightly toast on the grill.

Top each sausage with a portion of the mushroom mixture.

Served with grilled romaine hearts.

Creamy Bacon and Chicken

This is a simple go to meal whenever you haven’t planned in advanced. I made this last week and it is ALWAYS a hit in our family. Simply place frozen chicken in the crockpot and begin to cook throughout the day with a little help along the way. :)

This was a day I had the kids and was extremely exhausted between the three little munchkins and planning for my dad and sons birthday get away. This meal couldn’t have been more appropriate.

Ingredients:

  • 3 chicken breasts (frozen works great)
  • 1 Italian Sausage Link (Bratwurst works great too)
  • 1 can cream of chicken
  • 1 cup sour cream
  • ½ lb bacon
  • Rice

In a crockpot place frozen chicken and sausage on medium-high heat for 1-2 hours. Once chicken has begun to thaw, season to desired taste.

Once fully cooked, remove meat from crockpot and slice into decent size chunks.

Return to crockpot.

Add cream of chicken soup and turn to low heat or if your crockpot has a “keep warm” button, use that.

1 hour before dinner, broil bacon until fully cooked and crisp. Cut bacon into medium chunks and stir into crockpot. I do this an hour or so before serving to help release the bacon flavor into the cream sauce.

Right before cooking, add in sour cream and mix well. Serve over rice.

Bacon Pot Pie

My husband was craving my chicken pot pie but requested it with bacon this time. So, I took my creativity and put a twist on this to help make an entirely delicious pot pie with bacon.

He was fully satisfied by this pot pie that he actually ate leftovers more than once. He is not a leftover man, so when he eats leftovers multiple times that’s when I know he is in love.

What makes this dish so incredible is the bacon mixed with the beef flavor. If you are a bacon lover, you couldn’t ask for a better dish!

Ingredients:

  • 1-2 cup chopped chicken ( used rotisserie)
  • 3 cups vegetables choice (or frozen vegetables)
  • ½ lb bacon
  • ¼ cup chia seeds
  • 1 TBSP flax seed
  • 1-2 TBSP Beef Broth Better Than Bouillon
  • 2-3 cups milk
  • 1-2 TBSP flour
  • Pie Crust

On a broiler pan lined with foil, bake bacon at 400 degrees for 10-12 minutes or until reached desired crispness.

Chop chicken into large chunks and place in a large sauce pan.

Add mixed vegetables. I used carrots, corn, beans, peas, edamame and lima beans.

Add bacon.

Add chia seeds.

Begin to cook mixture until heated through. Once vegetables are cooked add in 1 large TBSP of Better Than Bouillon Beef Base.

Add in 2-3 cups milk and heat thoroughly until beef mixture is melted.

In a small dish mix 1 tbsp flour with the cream mixture and whisk until no lumps remain. Pour into vegetables and allow to thicken. If mixture isn’t thick enough repeat process with flour until thick. Remove from heat and set aside.

In a greased pie plate add the crust and filling.

Top with pie crust and pinch edges together.

Bake at 375 for 18-22 minutes or until crust is golden brown and middle is bubbly.

Bacon Stuffed Chicken

Bacon Stuffed Chicken. Similar to Cordon Blue but way better, I took the initiative to grill this up as I have found a new enjoyment in barbecuing lately. Although there are only so many things you can grill without making chicken more than 3 times in a week the same way, I wanted to take the opportunity to spice it up a bit. I choose to stuff chicken breasts like you would Cordon Blue, but because I had no ham, I turned to bacon, our true friend! :)

The weather was impeccable! While the chicken grilled, Cooper and I would take time to step away and water the garden we’ve been working so hard on.

Still not gathering the concept that once we dug the hole, buried our seeds and recovered the hole, doesn’t mean to uncover the seeds again. Sweet baby makes me laugh. I’ve thoroughly enjoyed the attempt to grow our garden together.

After the chicken and garlic covered beans were done, Cooper and I sat on the back porch together enjoying the weather and eating our delicious meal. Michael got home late from work and was so happy to see such an amazing meal in front of him that looked as if I slaved over it for hours. Though it looks complicated, its is extremely easy to prepare and the grill does most the work.

Ingredients:

  • 4 chicken breasts, sliced open
  • 8 pieces of bacon
  • 4 slices of Pepper Jack Cheese
  • Garlic Salt (optional)
  • Paprika (optional)
  • 1 lb Fresh Green Beans
  • EVOO
  • Garlic Salt

Prepare chicken by slicing open leaving one end still connected. Stuff with raw bacon and cheese. To hold shut pin together with three toothpicks. IMG_4168

Season the top of the chicken with garlic salt and paprika.

Grill until no juices flow clear. Be careful not to over cook.

Jumbo Grilled Cheese Sandwich

These are maniac sandwiches. They are piled high of many toppings leaving your mouth fulfilled with delicious flavor.

Ingredients:

  • 4 ciabatta rolls
  • ½ lb bacon
  • 4 pickles
  • 4 slices of pepper jack cheese (or Colby)
  • 2 avocados, sliced
  • 16 slices of turkey

Cook bacon until desired crispness.

Meanwhile, slice pickles, avocado and cheese. Set aside.

In a small fry pan lay turkey and crisp it up a little bit leaving you with warm, fried turkey.

Toast ciabatta rolls  and assemble with toppings. Use Mayo if desired!

Serve with a fresh pasta salad.

Bacon, Sausage and Beans

Deliciously seasoned bacon with Kielbasa sausage and beans. What more can you ask for? Protein, protein and more tasty protein!

I made the bacon from an incredible breakfast place my husband and I attended while on vacation. We thrive off of new breakfast places as this has been our favorite meal of the day. This place in particular had bacon called Millionaires Bacon and have been on the Food Network for this alone. It was cooked with brown sugar, paprika and chili flakes. I wanted something with those flavors and ended up with this meal. Their bacon is so thick that you only got 5 slices from 1 pound of bacon. It was also $6.50 for two slices. But let me say, it was actually the best bacon ever and definitely deserved the title of Millionaires Bacon.

So taking this idea from them, I decided to prep our bacon a somewhat similar to the millionaires bacon but not taking the full amount of time since I have had three little munchkins running around the hours since I’ve returned home…. (more on that later)

Ingredients:

  • ½ lb bacon
  • 1 lb kielbasa sausage
  • 4 tbsp brown sugar, divided
  • ¼ tsp red pepper chili flakes
  • ½ tsp paprika, divided
  • 1 can kidney beans

On a foil lined pan, lay bacon and top with 2 tbsp. brown sugar and 1/4 tsp paprika and chili flakes. Broil bacon until desired crispness. (I did 5 minutes) Set aside.

Meanwhile, in a large skillet, cut kielbasa sausage into small chunks and sprinkle with remaining brown sugar (2 tbsp.) and paprika (1/4 tsp) and add kidney beans.

Cook on med-low heat until brown sugar is melted and sausage is heated through.

Chop bacon and add to skillet.

I served this with sautéed kale and quinoa. It was a well flavored and my son absolutely loved every bite. :)

BLTA Hot Dogs

As you’ve learned by all my hot dog recipes, I love to try new things with them. Basically I took all the ingredients I LOVE and compiled them together to make this incredible meal.

Who doesn’t love BACON, LETTUCE, TOMATO, AVOCADO, AND HOT DOGS!?!?!?!?!?!

This meal was so incredible my husband was actually shocked by the look of it. He couldn’t believe he was about to eat hot dogs and bacon together in this delicious tortilla wrap!

For the Sauce:

  • ¾ cup mayonnaise
  • ¼ cup relish
  • 2 tbsp ketchup
  • 1 ½ tbsp hot & sweet mustard

Mix sauce together in a small bowl.

Mix together and set aside.

BLTA Dogs:

  • 4-6 polish dogs
  • 4-6 tortillas
  • 1 onion, chopped
  • a avocado, sliced
  • 1 medium tomato, chopped
  • 4-6 slices of bacon
  • Shredded cheese for topping (optional)

Meanwhile, slice hot dogs lengthwise and broil 2 minutes and flip. Broil another 2 minutes.

After the hot dogs are broiled, broil bacon until fully cooked to your desired crispness.

Place a tortilla on a broiling pan with cheese (add bacon if it was previously made and now cold; this helps it heat up)

I broiled it for 2 minutes until nice and crispy.

Add toppings: tomato, spinach (lettuce), avocado, and sauce mixture.

Fold up and eat! Can be messy but you wont complain once you bite into it!

For less crispy, you can roll up like a burrito, but I like the added crunch. If making for lunch for your wonderful husbands the following day to take to work with them, the less crispy way is easier to send them with.

Hickory Smoked Mahi

This meal has become one of my favorite meals to date. The delicious flavors wrapped in the sweet crunch of bacon- awe Yes bacon completes this meal. The homemade smoked hickory rub gave the mahi the greatest flavor. Beyond healthy in an unexpected way. Most the time I feel “healthy” meals are not satisfying to my soul, well this my friend accomplishes those feelings.

I buy my fish from Costco as they have very good products with no added hormones and so on and so forth. I had two pieces remaining for last nights dinner and sought out to make it the last best meal. Mission accomplished… this meal was fabulous and the best part of all was it was so simply!

Ingredients:

  • Mahi
  • Bacon, uncooked
  • 1 tsp cinnamon
  • 1 tsp coriander
  • 1 tsp smoked paprika
  • 1 tsp garlic salt
  • 1 tsp Caribbean jerk
  • Salt and pepper
  • Cauliflower
  • ¼ cup shredded cheese, for topping

Cut Mahi into serving size if not already done. Pat dry.

In a small bowl combine cinnamon, coriander, paprika, garlic salt, Caribbean jerk and salt and pepper.

Dip Mahi into seasoning- coating every side.

Take bacon and wrap around the fish, I used 4 pieces per serving as we are bacon lovers.

Place on a broiling pan. This helps to catch the bacon grease.

Bake at 400 degree for 20-25 minutes or until flaky.

Serve with fresh garden salad and steamed cauliflower topped with cheese.
