Garlic Toast

Here is another creative idea from my husband the same night he made blackened fish fillets. He was on a roll with not only being creative but proceeding to make it that night and having it be completely satisfying to my palette.

Hooray for a husband who enjoys to cook once in awhile.

We had homemade bread laying around and wanted some toast with our fish and mushroom saute. He decided to take no only garlic salt and butter but to melt blue cheese crumbles on the bread and then toast it. This allowed the cheese to melt into the pores of the bread and crisp up quite nicely. I could have eaten an entire loaf if I wanted, but luckily he only made four slices.

From oven to mouth in about 5 minutes. Can’t beat that!

Ingredients:

  • Homemade Bread
  • Blue Cheese Crumbles
  • Butter
  • Garlic Salt

In a small bowl add blue cheese crumbles and melt for 10-15 seconds in the microwave.

Meanwhile, spread butter across all your bread and sprinkle with garlic salt.

Top with melted blue cheese crumbles.

Toast in oven or toaster oven on 550 degrees for 2 minutes.

Be prepared to devour the entire loaf. So amazing and so much better for you than store bought garlic spreads.

We’re Going Camping Now We’re On Our Way…

“We’re going camping now we’re on our way. We’re gonna climb up a mountain and run and jump and play…” This was a song from my childhood. I have no idea who sang it and what it was on, but it definitely is still a memory my entire family holds. :)

We went camping last year but Cooper was a little too young to remember. I on the other hand, remember all too well. Not an ounce of sleep was able to rest upon my droopy eyes.

Cooper had an incredible time playing in the dirt and water but by the time bedtime approached he could not fall asleep. I believe the noise was ever so present from surrounding campsites that he was so confused. He was too young to explain this to, so we bore the brunt of our sleeping while holding him and walking around. Sitting in the car trying to fall asleep. Nothing worked!

So with that beautiful story in mind, we took the risk and headed out again this year…. crazy aren’t we?

IMG_6599Going for one night was a lot of work, but not knowing how Cooper would sleep, wasn’t worth the chance of a two plus camping trip.

Getting dinner prepared with a twig and a blanket on the table wasn’t too easy! But the Buffalo Blue Cheese Chicken Burgers were fantastic!

Good morning sunshine….6 am sharp, this little monster was up and ready to play. Luckily he slept through the entire night! Praise Jesus because I think we all would have reached insanity after being up all night!

Sometimes we all have days where we let our kids do anything and everything to simply stay happy. This day unfortunately brought about lots of sharp objects. He repeatedly said “ouchie, ouchie” and continued to play with them while I smiled down upon my child as if he just said his first word.

“Gain” A Beautiful Smell

Every time I go and visit my parents up in Washington, I always leave their house with the best smelling laundry. You may think I’m crazy but truth be told, I enjoy doing our laundry up there as I know there is a guarantee of freshness to be had in our suitcase upon arriving home in Oregon.

With a brand new front loader washing machine, I couldn’t figure out why our clothes simply were not smelling fresh, let alone clean. It was beyond me. I was making our own laundry detergent and opted to take a break as I thought this was our culprit. As I bought the most expensive brand on the market, Tide, I was still utterly unsatisfied. I was using laundry softener and still had no success.

My husband works out all the time and sweats like crazy. It’s pretty gross and I will save you the pain of too many details other than he smells like a sewer rat when he’s done. Sick! I love him dearly, but wouldn’t touch him with a ten foot pole after workouts. It’s almost as if a rat died after walking around in cow dung for days.

Okay, I said I would spare you the pain and I think you get my drift that the odder is very prominent and unwelcomed.

One afternoon I called my mom desperate for some help. I’m not sure if she really helped me as her answer to my question was no good. I asked what detergent she uses and she replied “whatever is on sale.” I immediately countered her response because if that were true, her laundry would not always remain consistently smelling delicious. We proceeded to go around and around in circles with very little information for me to grasp onto other than: “Buy what’s on sale and do not buy tide. It is a waste of money.”

Her comments were helpful but on the other hand they weren’t. I wanted exact information, brand, scent, size, etc. She said she sometimes buys Arm & Hammer, Gain, Purex so on and so forth and she said it so lackadaisical. So with that in mind, I immediately returned Tide since that was my detergent of choice earlier that day. My reasoning was simple: Go big or go home. $20 later I returned Tide to purchase Gain.

I tried Gain for no other reason except out of all the detergents my mother listed, this is one I had yet to try. Racing home to test the clothes saturated in sweat, I was thrilled upon my discovery. It worked, it really worked. The moment I pulled the clothes out of the drier, my nose was filled with such a refreshing scent. No more sewer rat, no more cow dung. It was a beautiful moment I about wept over the pile laying within my arms. I held my embrace for minutes as I sat overjoyed by this wonderful discovery. It was priceless.

Thankfully I shed no tears over the clean, bountiful, fresh scent. But this my friends was the cure. The cure to our devastation. The cure to the wretched smell that clung so tightly. This was the cure; GAIN. I will shout it from the roof tops. My husbands scent officially removed (well, the bad scent at least).

Buffalo Blue Cheese Chicken Burger

Buffalo Blue Cheese Chicken Burger

First and foremost, lets talk about the pink decor. I know your gawking at the beautiful plates that you have failed to see the delicious burger that rests upon your fingertips. This plate is associated with out camping gear. We went camping and this delicious dinner sat rest on the presence of a wonderful bright-pink-plate. Yahoo!

These burgers my friends were amazing and by far the best camping burger that anyone would be impressed.

Ingredients:

  • 4 Chicken Burgers
  • 4 Ciabatta Buns
  • Onion, sliced
  • Pickles, sliced
  • Lettuce

Buffalo Blue Cheese Sauce

  • 1/4 cup Blue Cheese Crumbles
  • 1/2 cup Blue Cheese Dressing
  • 1/2 cup Mayonnaise
  • 1/4 tsp Paprika
  • 1/4 tsp Ground Pepper
  • 2 tbsp hot sauce

In a small bowl, mix together Buffalo Blue Cheese Sauce. Set aside.

Cook chicken according to package instructions. I bought our from Costco. They are already cooked and needed to be grilled.

Toast bun and smoother on buffalo sauce and layer toppings.

I prepped everything before we left for camping so all that needed to take place was grilling the chicken burger, toasting buns and layering all the ingredients. It was actually really easy and a wonderful camping meal.

Breakfast Egg Muffins

Hello happy child! I not only got a picture of him laughing, but also looking at me! Yahoo! Mission accomplished!

IMG_6817This morning we went on a family hike and ended at Vivace’s in northwest 23rd for crepes and coffee.

Cooper was attempting to fill up his little truck with cheerios and take them to the “dump” AKA his mouth! (This was taught by his daddy…no surprise there)

As usual I pack Michael a lunch every day because it’s so easy to waste hundreds of dollars a month on eating out. This is a money saver folks.

Since he leaves so early in the morning I send him with breakfast, lunch and snacks to partake in all day long.

This mornings breakfast of choice was egg muffins full of delicious meat and veggies to fill his tummy. I choose this meal because it looks hard but this is exactly the opposite and that my friends, is why I made it. I was tired from the weekend and all the activities we did so this was perfect. It makes enough to send him with 3-4 breakfast’s depending on how many Cooper and I eat. :)

So lets get into it.

Ingredients:

  • 8 eggs
  • 1 1/2 cups milk
  • 1 tsp garlic salt
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • Dash of sea salt
  • Freshly ground pepper
  • 1 cup ham, diced
  • 1/4 cup tomatoes, chopped
  • 1/2 cup cheese, shredded

In a medium bowl crack the eggs. Whisk very well. 1 minute by hand.

Add in seasoning.

After whisking the seasoning in, add ham and tomatoes (any vegetables work).

Line a muffin tin with muffin cups or oil and fill 3/4 full.

Cook at 375 degrees for 15-20 minutes or until the middle does not jiggle. :)

Remove immediately IF you greased with oil and opted out of the muffin liners. This helps them come out easier. Otherwise, let cool on a wire rack.

I’ve been reading a book by Larry Crabb called Shattered Dreams. He talks about the impossibility to truly know Jesus until we face trials of many kinds; shattered dreams. He proclaims all throughout the book about what it means to feel Jesus, hear Jesus, and rest in His presence.

“Shattered dreams are never random. They are always a piece in a larger puzzle, a chapter in a larger story. The Holy Spirit uses the pain of shattered dreams to help us discover our desire for God, to help us begin dreaming the highest dream…Larry Crabb retells and illuminates this sometimes disturbing and often profoundly touching story, we are shown how God stripped Naomi of happiness in order to prepare her for joy. And we gain an unforgettable picture of how God uses shattered dreams to release better dreams and a more fulfilling life for those He loves.”

I’ve wavered back and forth on whether I truly agree with everything in his book, but I tell ya, he’s a tough cookie to crack. He has multiple points, great stories and real life experience. As I continue to read each page, I begin to feel conviction. Not conviction that I shouldn’t have dreams for my life, my husband, marriage and son, but dreams that when I see shatter before my eyes, I need to rest in the Shadow of His wings and find Peace. God meets us in our weakest, most desolate places of our soul. He longs to revive the passion we so desperately long to feel. He longs to fulfill our dreams beyond comprehension. And He will. It may not be had on this earth, but when we see Christ face to face, our dreams will forever be met with no tears or suffering. Our long-suffering will be worth every tear we cried, every sorrow had and we will be forever with Christ never seeing our dreams shatter again. What a miracle, literally a miracle.

This world does not hold such an idea of no pain and sorrow. Our eyes become wet more often than not. The news of a newborns death, fatal car crash, suicide, crumbled marriages, broken families, false gods and spiritual warfare are ever so present. We only dream of a day that no pain exists anymore. Our minds cannot comprehend such an idea.

As I was reading this book, I found myself not wanting to believe that pain brings us closer to God. I immediately wanted to put the book down and never turn another page. I felt as though the more pages turned, the more pain I would encounter that I so desperately wanted to avoid. Deep down, I know God doesn’t work that way; playing on the battles of my mind. But I still wasn’t ready to embark on another terribly painful road. I wanted to stop on the side of the path and take a breather from the past 3-5 years of hardship. I wanted to hear God speak to me that I’ll receive a break, but as each page turned, I realized though the hardship of the past 3-5 years was painfully difficult, the miracle that resided within the pain is my relationship with Christ. Going deeper with Christ, knowing Christ and desiring Christ. That is how I would sum up the past three years if I had to. Yes pain resided. Yes heartache was to be had, but the joy of knowing my Savior and His deep, unspeakable love for me, His child, was beyond comprehension that only He could allow me to feel. Had I not walked the road of hardship the past 3 years, I would not know Christ the way I do today. And let me tell you, I have barely cracked the surface of who Christ really is.

My passion for Christ was not crumbled but ignited. The deepest parts of our soul is where God so desperately longs to meet each and everyone of us, but we tend to put guards up and quickly get through the pain we are currently experiencing ever so quickly to move on to the next phase in life. We are called to rest, seek and know God. He desires the deepest dreams of our hearts to be met. He wants to fulfill them in ways we cannot fathom, but more often then not, our dreams being met, look entirely different than we envision. And that  my friends is Faith; trusting God to fulfill your deepest desires, protect your heart and bring you closer to Him even when life is incredibly messy. 

Be still and know that I am God. (Psalms 46:10)

Living in dependence on Me is a glorious adventure. Most people scurry around busily, trying to accomplish things through their own strength and ability. Some succeed enormously; others fail miserably. But both groups miss what life is meant to be: living and working in collaboration with Me.

When you depend on Me continually, your whole perspective changes. You see miracles happening all around, while others see only natural occurrences and “coincidences.” You begin each day with joyful expectation, watching to see what I will do. You accept weakness as a gift from Me, knowing that My Power plugs in most readily to consecrated weakness. You keep your plans tentative, knowing that My plans are far superior. You consciously live, move, and have your being in Me, desiring that I live in you. I in you, and you in Me. This is the intimate adventure I offer you.

The promise of Hope is here. God longs to meet each and every one of us in the midst of our pain. The question you must ask yourself is if you are allowing Him to. Or are you quickly trying to push through the “trial” and move on with life? That my friends is an honest soul seeking question and you must be fully honest with yourself when choosing to answer that. I find every time I enter a trial of any kind, I want to rid it immediately from my life rather than seek what God is trying to accomplish within my soul and how He is longing for me to go deeper with Him.

Through reading this book Shattered Dreams, I could pinpoint a couple times in my life where my dreams were ultimately shattered and one in particular that still may be shattered forever. Or is it? Is it truly shattered or is God going to full that dream in a way I never saw possible or desired. A way that may not be what I long for, a way that doesn’t seem fit for me? This dream I am talking about is the dream of having a large family. I have one little miracle sleeping in the next room as we speak. He is the joy of my life. But when it comes to further children, I am not sure if I can have another baby, deliver a healthy child and come out on the other side alive and well. My Little Miracle

This my friends is a true test of whether God will fulfill my dream in the manner I see fit, or if He will choose to shatter my dream and fulfill this dream in a entirely different manner. We are still in the process of knowing the outcome and will one day look back on this dream but hopefully, with either outcome, I will come out closer to Christ than I currently remain.

Can you believe school is starting already? It’s crazy how quickly life passes by and how much quicker it goes with children.

He’s quite the little boy now, not so much a baby anymore. :( But he’s still beyond adorable. Clearly I am a bit biased towards my child. :)

I love summer as there are countless opportunities for our family to partake in but by the time we accomplish these tasks, summer has flown by and we are scurrying around for last minute opportunities before the weather takes a turn for the worse.

Today was a perfect example. We took advantage of the great weather and went hiking at Forest park and went to brunch at a delicious crepe and coffee house.

Enjoying the weather, family time and good conversations- now that is what life is all about.

And of course We have to love fall for the simple fact that football begins. Are any of you football fans? College? NFL or both? I prefer NFL but we do get our college share in as we do love watching Oregon play. Go Ducks.

So even though our fabulous weather will be leaving quickly, I will continue to embrace my son still being young, innocent and a mama’s boy. Being able to avoid the hustle and bustle of last minute school shopping, fashionable clothes drama with your teenager trying to fight their way to the top of the popularity chart and worrying about their group of friends. Our biggest battle will be my creativity on outdoor adventures to keep my son busy, that’s a battle worth fighting right now. But I do believe when we reach the stage of teenage drama, I hope and pray we will have it a bit easier as boys are not as difficult as teenage girls. I’ve been there, done that….Haha my poor parents.

So with that in mind… let’s talk fish. :)

Ingredients:

  • 3 fillets, White fish
  • 2 tbsp Butter
  • 1 tsp Garlic salt
  • 1/2 tsp Onion Powder
  • 2 tsp Smoked Paprika
  • 1/4 cup Half & Half
  • Dash of Italian seasoning for garnish (optional)

In a medium skillet, melt butter. Once melted add garlic salt, onion onion powder and smoked paprika. Stir constantly. Once slightly thickened, add half & half to mixture and continue to stir until sauce begins to bubble. Add fish and sear on each side for approximately 3-4 minutes on medium high heat.

Served with sauteed mushrooms and quinoa salad.

Heaven In A Pastry, Chocolate Chip Scones

Welcome to heaven in a pastry or shall I say chocolate chip scones for you newbies.

My sweet sister and her family came to visit a couple weekends ago and I made chocolate chips scones per my husbands request and knowing that even the kids would devour them.

I didn’t realize how small my child is until his cousins came to visit. Agezu is 6 years old and quite the strapping young man. These two cousins absolutely LOVE one another. Cooper lets Agezu pick him up under his armpits and gets drug anywhere and everywhere with a smile on his face. It’s super cute how they just play with one another, even in ways that seem utterly uncomfortable. Kids, I tell ya.

And of course, the pool took precedence with all the boys in the house… Not a single gal to spare other than us two mamas.

So back to the scones and how they got devoured within the first half hour of cool down, lets take a look at heaven in a pastry…

Ingredients: 

  • 2 cups unbleached flour
  • 1/2 cup brown sugar
  • 2 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1/2 cup heavy cream or half & half
  • 1 egg
  • 1 tsp vanilla
  • 1 heaping cup dark chocolate chips (any kind works)
  • coarse sugar for sprinkling on top before baking (optional)

Preheat oven to 400 degrees.

In a stand mixer, mix the flour, brown sugar, baking powder, cinnamon, and salt. Grate the butter (hand grater works great or use a food processor). Toss the grated butter into the flour mixture and mix with fingers. Set aside.

In a separate bowl, whisk cream, egg, and vanilla together. Pour over flour mixture and slowly mix with mixer on low speed just until incorporated. Carefully fold in chocolate chips. Try your best to not overwork the dough at any point. Work the dough into a ball with floured hands as best you can and transfer to floured surface. Press into a circle and cut into equal wedges with a sharp knife. Top with course sugar and transfer to cookie sheet.

Chocolate Chip SconesBake for 20-25 minutes or until lightly golden and cooked through.Cool on a wired rack. Enjoy your scone with a great cup of coffee and enjoy your breakfast. They freeze well too, if so desired.

If you are a pastry fanatic such as my husband and I, you will devour these scones even without kiddos around. Maybe that’s the mystery here, maybe I used the kids as an excuse to the dismissal of our chocolate chip scones…the mystery remains unknown. I shall forever keep this secret to myself.

Test it yourself…maybe your own mystery will begin once you make heaven in a pastry.

Happy Labor Day To One And All

Happy Labor Day friends. I hope you all are enjoying your special day off and can relax with a barbecue, friends and family. This Labor Day we choose to remain housebound as we absolutely despise holiday traffic. We had a barbecue last night, went on a hike this morning followed by brunch at a Crepe and Coffee house along with continual prepping for our house to be painted next weekend. Although, I can’t take credit for that, my hubby has done all the work.

Tonight…we are laying low and having a movie night with barbecued hamburgers and a sleepy baby who missed nap today. I on the other hand feel as if I haven’t slept in ages and am a walking zombie. Maybe I am…who knows. I don’t know up from down let alone what it means to not be tired anymore.

Enough of my complaining as I have probably worn all of you to the state of oblivion with my continual talk of tiredness.

Tired, tired, tired. Okay there, I got it all out.
