My husband picked this out as I let him choose three nail sheets from the catalog. This was one that I would NEVER pick but gave him the benefit of the doubt.

As I applied my nails last night I was l pretty amazed at how much I began to like them. They actually were growing on me extremely quickly.

Once again surprised by how many nail designs I wouldnt choose but end up liking. Liking enough to purchase yet again.

Crockpot Tomato Bisque

Friday night I had been feeling as though I was coming down with something. Cooper had been sick with a cold the last couple days and I really, really was struggling with dinner that night. I absolutely love soup and could eat soup every day of the week. My husband on the other hand loves the soups and stews I make, but if given the option of soup or steak he will choose steak. (They are a good combination together as well) So, tonight I planned on making homemade bread and my tomato bisque soup. I began the bread the previous night as it has to rise overnight. I had a really bad feeling it wasn’t going to turn out once it was fully mixed. Something about the texture made me question this bread from the beginning. I didn’t throw it out as I gave it a shot to see if it would still rise properly. The following day I went to form my loaves and it was simply not the right texture. I decided to bake it anyways and see if it was still good. Bad idea. Let me tell you, something so terribly wrong happened that I wouldn’t even try a piece once baked. It was bad, I threw it away instantly and was so bummed that now we didn’t have homemade bread for this dinner. Oh well, life happens.

What happened to the bread was I used brown rice flour verses my usual white flour. This is the ONLY thing I did different and it turned out so wrong that I must note not to use any flour other than white flour or bread flour. Who-would-a-thought. I’ve made this bread many a times without fail and it has always been a winner. NO brown rice flour next time. :)

I had hoagies on hand and lightly buttered them with garlic salt and broiled them for a few minutes. It worked in a pinch.

Crockpot Ingredients:

  • 2 can’s diced tomatoes
  • 1 cup celery diced
  • 1 cup carrots diced
  • 1 cup diced red potatoes
  • 1 cup onion diced
  • 1 tsp oregano
  • 4 cups chicken broth
  • 1 bay leaf
  • ½ cup flour

For the cream mixture:

  • 1 cup parmesan cheese
  • ½ cup butter
  • 2 cups half and half, warmed
  • Salt and pepper to taste

In a crockpot add chopped carrots, onions and potatoes.

Add diced tomatoes, oregano and bay leaf.

Let simmer for 4-6 hours on med-low heat.

30 minutes before serving, melt butter in a sauce pan.

Whisk for 5-7 minutes until thickened. Slowly add 1 cup of soup broth to the flour mixture to avoid lumps.

Whisk well and add to Crockpot.

Stir well and add parmesan cheese and warmed half and half. Let simmer for 30 minutes to allow soup to thicken up.

Serve with my English-Muffin-Bread and a side salad.

On Sunday we went to church and came home and had leftovers. We had this delicious soup and made grilled cheese to dip into the bisque. It was so tasty and makes great leftovers.

Never Ending Roller Coaster

Just when you think life may have slowed down just for a day, you become utterly wrong. “Why try and make life slow down,” I think to myself. This has been the longest, quickest two years of my marriage. I never knew what I signed up for when life took hold of our family. It’s the continual surprises that tend to wear me down and unfortunately, they are not all good surprises.

As you all know, my mother-in-law who is sick and terminally ill has led this life of a roller coaster with her health and emotions the past three weeks. I don’t think she fully understands it as the days keep ticking away, but her loved ones definitely feel the twist and pull, up and down, side to side, jerk of emotions from good to bad, better to worse and so on and so forth!

After the storm of last week, I have been yearning for a break in “rain” come today. That happened for the first 3 hours and once I contacted my mother-in-laws husband, I was informed pretty quickly that this roller coaster turned a corner that once again yanked our heads from one side to the next. Hearing the words that her lungs are filling with fluid and her blood pressure is all over the place was definitely discouraging. We have neared the end and simply do not know how to prepare for this particular “slap in the face.” A cold drink of water continues to awake our sleepy eyes.

It seems that this roller coaster of life is never ending and I can vividly see the ground from up above, upside down and one crank to the next keeping us on our toes as much as possible. I finally reached my peak last week, I couldn’t keep it in any longer, my body decided to allow a nasty cold in, keeping me awake at night and coughing through the day. I haven’t been sick in months, yet when my body seems to be so worn, I still fight through them but this cold, this one hit me hard. The emotional battle of trying to be strong for my husband while he loses his mother has been everything but strong for me. I’ve tried but after last week, I hit a wall and have been an emotional basket case since.

I long to help support my husband, but how do you simply give the proper words when there is no changing the past nor the present. The past haunts my husband from childhood to his 35 year old body dreading the phone call of this wretched outcome. 27 years wasted? I don’t think so! I believe from the depths of my soul that everything happens for a reason. It is not always joyful, but God DOES use everything for the good of those who love Him. Through tragedy and pain, my husbands 27 years of non-relation with his mother, was everything but a waste. I believe this wholeheartedly even though it may not make sense right now. The little knowledge we’ve been given has been beneficial. Healing is taking place in some facet or another. My husband is allowing himself to grieve not only losing his mother, but losing her a second time.

The first time, he lost her was when he was put in foster care at age 8. 27 years later, he’s now losing her to cancer. The horrible feeling of losing a parent alone is beyond description, yet this is his second parent. He lost his dad at age 8. I know we all travel this life with a story and we can use our story for glory or for pain.

The roller coaster that simply will NOT end, I pray will be used for God’s glory!

Moment of Truth: My husband is learning more than he can see at this moment in time. This tragedy has mended relationships, opened the door for healing and brought about as much positive influence one can have in a time such as this. I am proud of my husband, he is a tough guy yet so tender on the inside. Crack that shell and you have a pile of mush longing for peace and joy. I pray for that exact thing to be laid upon my husband at this very moment. I love you Michael John!

BLTA Hot Dogs

As you’ve learned by all my hot dog recipes, I love to try new things with them. Basically I took all the ingredients I LOVE and compiled them together to make this incredible meal.

Who doesn’t love BACON, LETTUCE, TOMATO, AVOCADO, AND HOT DOGS!?!?!?!?!?!

This meal was so incredible my husband was actually shocked by the look of it. He couldn’t believe he was about to eat hot dogs and bacon together in this delicious tortilla wrap!

For the Sauce:

  • ¾ cup mayonnaise
  • ¼ cup relish
  • 2 tbsp ketchup
  • 1 ½ tbsp hot & sweet mustard

Mix sauce together in a small bowl.

Add Relish

Add Ketchup

Add Mustard

Mix together and set aside.

BLTA Dogs:

  • 4-6 polish dogs
  • 4-6 tortillas
  • 1 onion, chopped
  • a avocado, sliced
  • 1 medium tomato, chopped
  • 4-6 slices of bacon
  • Shredded cheese for topping (optional)

Meanwhile, slice hot dogs lengthwise and broil 2 minutes and flip. Broil another 2 minutes.

After the hot dogs are broiled, broil bacon until fully cooked to your desired crispness.

Place a tortilla on a broiling pan with cheese (add bacon if it was previously made and now cold; this helps it heat up)

I broiled it for 2 minutes until nice and crispy.

Add toppings: tomato, spinach (lettuce), avocado, and sauce mixture.

Fold up and eat! Can be messy but you wont complain once you bite into it!

For less crispy, you can roll up like a burrito, but I like the added crunch. If making for lunch for your wonderful husbands the following day to take to work with them, the less crispy way is easier to send them with.

Ditch Digging Update YET Again

Oh my goodness! Yes, this is my third update for our dug-up yard the last three months! And the saga continues….

Headed on our family excursion…

Yesterday my husband spent the day, the entire day working on our collapsed pipe and replacing the cement connection pipe. We took our family trip to Home Depot first thing in the morning and then he went straight to work. The problem within replacing the pipe is this pipe is our main sewer line which has traces of feces and we DO NOT want my husband to get sick. He bought a respirator and body suite!

Of course…too small

While he was out there, he needed me to me to run back to Home Depot as one of the fittings was too small. As a approached Home Depot I had a feeling they wouldn’t have the part we needed. Unfortunately, my feeling was beyond accurate but little did I know that on weekends most plumbing stores are CLOSED. So I had to drive an additional 20 minutes across town to find this part. I walked in to find that you need to “take a number” and wait for them to call you. They were extremely busy, it was almost as if I stumbled upon DMV.  When I finally got help, I bought three different sizes because I was determined NOT to drive back if I got the wrong size. I head home and luckily the middle size was perfect.

I head in to check on my sleeping babe as my husband remained outside the whole time I was gone because he was covered in mud or feces, I’m not too sure which. I peek out the window now and again to see him hidden deep within the hole and other times see him frustrated at life. I knew he wanted to quick long ago, yet we currently had no running water and wouldn’t have running water until it was fixed. Finally, 5 hours later and after MANY complications, he got the pipe connected. He added a cleanout as this has been a major problem that it would be easier to access with a cleanout readily accessible. Once it was connected (minus the cleanout) we had me flush both toilets.

Plugged!!!

AYI YI YI….to our dismay we now had complete blockage of the pipes….the furry raised in the two of us as the problem was clearly marked out before the digging even began. If my husband spent all that time to not have addressed to proper issue, we were not going to be happy. Too many hours and too many dollars spent thus far.

Michael has a snake and tried to snake it out but we had NO success. I finally had a brilliant idea to call Roto-Rooter and ask for a complimentary snake as the issue clearly wasn’t where they had told us. While we waited my husband showered because he was covered from head to toe in feces. It was the most rancid smell to date and he was covered in it! (praying he doesn’t get sick) The supervisor on call came out with a team mate and was beyond nice! They did three different things to help clean out our pipe and took a camera down as well. We have two LARGE tree roots taking over our pipe. So much so that “junk” easily attaches itself to the roots causing our pipes to back up quickly.

We were given two options: 1. Keep digging and replace more piping for another 10 feet… or 2. Keep digging and replace more piping. :) Okay so we went with neither of those options and decided we would fill the current hole back up with dirt and buy some products that helps kills the roots over time and wash them away. We have to products to purchase and continue to treat for the next 4 months and then once a month after that. This will buy us some time as we are not going to tackle this ourselves and continue to risk my husbands health.

The men that came out were soooooo nice and gracious to us that the job was completely free and they gave us a lot of feedback and help to solve our issues. We had a couple “old faithful’s” take place in the midst of the cleanout and Cooper was so excited to watch this all take place. The smell was horrific and because it was so blocked my husband unfortunately had to deal first hand with it, literally. :)

BUT needless to say, the problem is fixed, cleaned and hopefully taken care of. We will begin treating the roots this week and double flushing, dishwashing and doing lots of laundry as the extra water will help flush any blockage of toilet paper that begins to take place. Being fully aware of the situation is extremely helpful and having a game plan is also beyond beneficial. I was avoiding sending more water down the drain to avoid a backup, but now that it’s clean, that’s the best thing we can do. YAY!!!

Who would have thought that our “situation” could be so extensive, time consuming and hazardous? Thankful that our pipes are healed for the most part with a couple big boo-boos that we will treat with a few Band-Aids. :)

Moment of Truth: Both my husband and I put our fair share into this “situation” and have a new appreciation for plumbers!!! They deserve our respect and support!

Hot Dog Sauce

I made BLTA-Hot-Dogs and this sauce was too good to not make note of.

It’s easy and delicious! And you will have the ingredients on hand!

It also makes a great fry sauce. We have sweet potato fries that were delicious with this sauce. :)

Sauce:

  • ¾ cup mayonnaise
  • ¼ cup relish
  • 2 tbsp ketchup
  • 1 ½ tbsp hot & sweet mustard (any mustard works)

In a small bowl mix together mayo…

This mustard is incredible for this sauce, but any mustard will do. A little spicy adds great flavor.

Mix together and store in the refrigerator.

Worldly afflictions hold the enemy near, blinding us from the freedom we have in Christ. We often enjoy the “perks” of the world only because the enemy wants us to be addicted to worldly desires to avoid having a deep relationship with Christ. Even those worldly habits of sin you created, are not only miserable long term but seem so instantaneous to make us happy at that present moment. They are addictions that leave us hungry, hungry for something more. The enemy is on the prowl using his crafty side to blind you from true freedom making you constantly strive for worldly pleasures to fulfill that freedom. Some examples that we believe make us happier: a new job, more money, drinking, drugs, food, sex, material possessions just to name a few. In all reality some of this ‘things’ do make us happy and aren’t all bad. The problem lies when we strive for those things more than we strive for freedom in Christ.

Although some worldly pleasures are not necessarily wrong, we lose sight that God has even more in store of us that is way beyond the current pleasure. We often limit God and his ability to actually give us that freedom in Him. The battle of the mind and the battle of putting words into action are what keep us from experiencing the true freedom Christ has handed us. He is waiting for us to reach out and accept it. Smokey Pork Loin

I made a delicious rub for my pork loin the other night and placed it in the crockpot!! Super easy, incredible flavors and makes for a great left over pulled pork sandwich! Can’t beat that!

Ingredients:

  • Pork Loin Fillet
  • 6 red potatoes, cubed
  • 1 large onion, chopped
  • Smokely BBQ Rub**
  • 1 clove minced garlic
  • EVOO

I foil lined my crockpot for easy clean up.

Add the pork

Chop onions and potatoes

Mix the rub together and spread on top and add additional EVOO.

Cook on med-low heat for 6-8 hours or med-high heat for 4-6 hours.

The New Do

The New Do…

My husband and I have been blessed with a tiny little man who has had a full head of hair since the moment he was born. We has received 10 haircuts by his first birthday. Since than we lost track! He has had 2 salon haircuts and the first was pretty cute and shaggy. I wasn’t ready to rid the baby in him yet. We kept it long but cute and he still looked like my little baby!

Since then, his hair continues to grow extremely healthfully and keeps the thick, long shag going on. My husband keeps telling me he needs a haircut but I knew deep down, this hair cut would forever rid the little baby look, so I postponed taking him in. Did he look handsome, of course because he is my son. BUT did it look good, honestly, it started to look like he was kind of homely and needed a good whack of the hair. :) Even the lady at the salon was commenting how cute he is BUT how much cuter he would be if we chopped it. I knew the moment she said that, I had begun to overlook beyond what everyone else could see….a sweet little mess of hair!

So….we took the liberty and made my son have the cutest haircut to date! :) I was thrilled and so was he, he received a lollipop while receiving the buzz cut AND she gave him another one once he finished!

My handsome man couldn’t possibly get any more adorable, yet he does!! It constantly amazes me how sweet and tiny this precious little man is and most of all the biggest surprise….. he is MY son!
