Sausage and Rice

This thirty minute meal contains sausage, rice and shrimp. It’s almost too simple and I believe that this is why Cooper devours this meal and eats leftovers until it’s officially gone.

It’s a rarity in our house to find meals Cooper not only loves, but will eat again the next day. Makes life less complicated in one area at least. :)

Ingredients:

  • 1 Turkey Sausage (Johnsonville or alike)
  • 1 medium Red Pepper
  • 1 Medium Orange Pepper
  • 3 cups shrimp, tail off and devained
  • 4 cups Jasmine Rice, cooked
  • 5 TBSP butter
  • Garlic Salt

In a small skillet add sausage and 1 tbsp butter. Heat through.

In a separate skillet add shrimp and 2 Tbsp butter and garlic salt.

Cook until fully pink making sure not to over cook.

Once heated through set aside. Leave juice in skillet and saute vegetables in remaining juice.

I add rice and 2 TBSP butter to rice maker for additional flavor. I love my rice maker.

Pour sausage, vegetables and shrimp over rice. How easy is that?

Little Man Workouts

Oh how my son never ceases to amaze me. His sweet little personality in every step throughout the day is a constant reminder of thankfulness.

I believe Cooper has officially put himself in charge of daddy’s workouts and I believe that Cooper would make the best trainer out there.

He decided he wanted to work out with daddy and do his ab workout. His tiny little body lay next to daddy while he copies everything daddy does from P90X ab ripper x.

“Get to work daddy” as Cooper has happily put himself in charge of daddy’s workouts and keeps him going. He continues to ask for “one more” every time Michael stops to take a break. “One more” pull-up, “one more” sit up. Keep going daddy, it’s fun to watch! :)

Sweet baby was so proud of himself. I can’t believe this little guy is going to be 2 next Saturday the 21st. :( It’s been really hard on me as I am so happy he’s growing and developing his cute little personality, but I am also so sad the baby stage is officially gone.

Pride Wreaks Havoc

Pride wreaks havoc on your own life and those around you. Are you drawing people near or pushing people away. Do you have good solid relationships or shaky, rocky acquaintances?

Our pride as humans is out of control. Anger and pride are our own worst enemies. We do not know how to love the unlovable and how to do the impossible. We are better than everyone and it’s always someone else’s fault, cutting you off in traffic or always someone else’s pride; never your own.

The person that is freed, is the one who can lay down their pride no matter the cost, no matter the outcome and no matter if you get a positive response. We all want to feel wanted and when we are hurt our pride steps in and says they aren’t worth it anyway.

What a sad way to live. What a sad mentality. What a sad outlook on life. We are so quick to place the blame and make it someone else’s fault to make ourselves look better, be the lucky one or simply portray ourselves as “above it all.”

But why? You gain nothing from pride but a bitter heart, resentment to the world and an unhappy self. Striving for something that will never please you but will only take you further down the rabbit hole.

I’ve seen pride take over peoples lives and literally hold them hostage. Are you headed down this path? Are you aware of your “Achilles heel” and what will always trip you up?

Moment of Truth: Be aware of your weakness, strive against it, seek to become a humble woman of Christ rather than portraying yourself to be above others. Set aside “Christianity” and live Biblically.

BBQ Chicken Quesadilla’s

Do you ever have those moments when you can’t think of any good dinner ideas? I often do and those days are the days I hate looking in my fridge. All the random items that have compiled throughout the week but nothing to do with them. I decided this concept must not be true otherwise dinner will never get made tonight.

As much as I get stuck in a rut of the same ol’ same ol’ routine of chicken, burgers, pasta and so forth, I was out to make something great from these items. I had leftover rotisserie chicken and lots of vegetables longing to be eaten. After much thought, I decided to add BBQ sauce to the chicken to spice it up a little and then saute mushrooms as we have plenty of them. Prepping these two items was less than ten minutes and brought me to the glorious idea to turn it into quesadilla night. We all love quesadilla’s and with everything on hand it made for an easy, quick dinner.

Chopping my vegetables during nap time and setting them aside as well as prepping the chicken with BBQ sauce was anything but hard. These few minutes passed immediately and now I am ready and waiting for dinner time.

Ingredients:

  • 2 cups mushrooms, chopped
  • ½ onion, chopped
  • 6-8 Brussels sprouts, chopped (optional)
  • 1 tsp Garlic salt
  • Freshly ground better
  • 1 tsp Italian Seasoning
  • 1 cup chicken
  • 2 tbsp BBQ sauce
  • 1/2-1 cup shredded Kerrygold cheese (optional)

Chop mushrooms, onion and Brussels sprouts. Toss with garlic salt, pepper and Italian seasoning. Begin to cook on medium-low heat.

Meanwhile, in a medium bowl add chopped chicken and barbecue sauce. Mix and set aside.

Once vegetables are nice and tender, add chicken and heat through.

On a griddle, lay tortillas one at a time and spoon mixture onto tortilla and top with cheese.

Add cheese.

Fold over and cook each side until golden brown.

Top with sour cream, salsa, avocado and chives.

5 Minutes Inside a Mom’s Head…

What does five minutes inside a mom’s head really look like? I saw this article and laughed to myself while crying over the harsh reality that it is beyond true in every mom’s life.

The comforting thing is we all know what one another is going through while men sit on the sidelines contemplating the next win in basketball or whose going to get drafted to which team.

Some people may think 5 minutes is nothing but a long relaxed deep breath. These five minutes are anything and everything but a deep breath. More like gasping for air, panting as if you just ran a marathon or simply drowning and still making your mental checklist.

I saw this article and it was a must share. Any and all of you who have children will relate to this article while every man reading this may think we’ve lost our minds and have our “job” so easy. “Easy?” You want to talk about easy? My life is everything but easy. Yes I may stay home with the kids and not get up at 6 and get to work by 8, work all day to have an hour lunch to enjoy the sun, take a walk or even go out to eat with the dudes to only get home at 6 pm. Dinners made for you and your kids bathed and ready for bed. “Yes, I stay home with the kids, yes MY job is easy!”

Sometimes I want to yell this to every man out there who complains about there regimen of working to support the family. I 100% appreciate and support any man who is willing to care for their family so the wife can take the opportunity to hold the house together and raise the children with good morals and standards while keeping them in a family environment rather then childcare. I also appreciate the simple fact that my husband can earn triple if not quadruple the income I could earn in a given year. Yes, I support you and greatly appreciate you and all the hard work it takes in our society these days to have a one income family! Thank you!

On the other hand, learn to appreciate your wife. Appreciate your child learning manners, learning their alphabet, getting socialized on play dates, having educational toys and activities to participate in. Appreciate that your child and wife are probably happy when you reach home at the end of the day.  Appreciate that you probably don’t partake in most the household chores, errands, grocery shopping, laundry and bills that’s been taken care of for you! Appreciate that when an outburst happens at home, your wife probably knows how to handle the situation and guide you through it!

This may make you laugh at the harsh reality of it, but lets be honest, a man wants respect and appreciation so badly. This is what makes a man a man. We all long for respect and appreciation as well. We may long to receive it in different ways than our spouse but oh how true it is to feel that respect for what you do on a daily basis. Both men and women need to bot give respect and receive respect. We work our jobs because that’s the job we’ve been given at that point in time and we need to be thankful and appreciative of one another. Households are no easy to run and we all know earning an income to support a family is a challenge in and of itself. No need to put one another down and compare our job tasks, simply appreciate them and love them for what they do!

Honey Nut Granola

I was craving granola recently as I haven’t made it in quite some time. I love homemade granola with vanilla coconut milk. So delicious on a hot summer day for breakfast or even a healthy snack.

I started eating this about 3 times a day as something about it is so light and healthy yet delicious and fulfilling all at the same time. I go on spurts where I cannot get enough of cereal. This happens more often when summer approaches and I do not want a heavy meal.

I hope you find this just as satisfying as I do!

Ingredients:

  • 6 cups cooking oats
  • 2 cups bran flakes
  • 2 cups shredded coconut
  • ¼ cup chia seed
  • ¼ cup flax seed
  • ¼ cup pumpkin seeds
  • ½ cup cashews
  • ½ cup pecans
  • ¼ cup sunflower seeds
  • ½ cup dried blueberries
  • ½ cup dried strawberries
  • 2 ½ cups honey
  • 1 cup vegetable oil

In a large bowl add oats, bran flakes, coconut, nuts and seeds.

Add in blueberries and strawberries.

Stir well and add vegetable oil and toss again.

Stir in honey and mix really well. Once mixed, dump mixture into a large dish; preferably a 10×15. Bake for 18 minutes. Stir mixture and bake another 18 minutes. Depending on how dark the mixture is after the second set of baking, you can bake it another 10 minutes or simply be done. I enjoy a little bit of crunch to my granola and do the three rounds of baking.

Once bake transfer granola IMMEDIATELY to container to allow to cool. If you leave granola in dish to cool down, you will have a heck of a time getting it out as the honey loves to stick to the glass.

Mmmm I love granola. I always eat a cup of granola fresh out of the oven and add a few blueberries.

Creamy Chicken Taquitos

I love Taquitos but these are even better because they are not fried but BAKED. Sometimes I long for a simple meal not only for one night, but for the entire week. Sometimes cooking dinner after a long day of chasing kids, doing household chores and running errands is the last thing I want to do. If many of you are in the same boat, I hope you enjoy this easy recipe that the whole family will devour.

Ingredients:

  • 2 large chicken breast, cooked and shredded (Canned chicken works great!)
  • 1 can diced chilies
  • 1 can olives, chopped
  • 1 cup mayo
  • ½ cup blue cheese dressing
  • Dash of Paprika
  • ¼ tsp garlic salt
  • Salt and Pepper to taste
  • 4 ounces cream cheese, softened
  • 6-8 flour tortillas

In a medium size bowl, combine chicken, chilies, olives, paprika, garlic salt and salt and pepper.

Mix well and add mayo.

In a small bowl add cream and soften in the microwave.

IMG_4364Mix blue cheese with softened cream cheese. Mix with chicken.

Add enough mixture to tortillas and roll up. I fill them pretty full as this is our main dish.

Bake at 400 degrees until golden brown and crispy. If you want them extra crispy, turn on the broiler and broil each side until it’s reached desired crispness. :)

Thought of the Day

“Forgiveness is not a feeling but a decision to release that person to Christ.”

Need I say more? I shouldn’t’ have to but due to our innate human quality of pride and bitterness, it is always a good reminder to forgive your neighbor and love with Christ’s love. It’s easy to get caught up in our own little world feeling justified for the life we live.

forgivenessI realized yesterday when talking with my husband that life can be full of promises and you can have the world at your fingertips, but what does it matter when you choose to dwell on the past and not move ahead? Sometimes we get so caught up in the mundane of life that we forget the blessings we are currently holding and the blessings taking place today, tomorrow and the next.

Life is a blessing! Embrace it and do not let your blessings be overlooked by worthless concern. Sometimes our worries are so small but the shadow is so enlarged we lose focus.

Wardrobe In Style?

I made this deal with my husband recently as I have continually heard that I have so many clothes in my closet and hardly wear half of them. Same with my shoes, he commented a week ago that I wear sandals all summer long and never wear most of my shoes, so what’s the point of having them? With that in mind I decided I would wear all my shirts in the closet once before repeating a shPostsirt. If I simply refuse to wear it, than I will toss it out. I wanted to show that there is a point to all the hanging clothes and shoes that sit there. They will be worn for that one particular occasion and though it may only be once, it will get worn.

So far I’m on day 12 and it hasn’t been too bad yet. He also points out that there are many items in there still with tags on them. I told him I like to purchase a top and wait awhile before I wear it as it is a nice surprise down the road. :)

He has asked twice now if one of the tops I’ve worn is new, I hung my head low and said “no, it’s just been awhile.” We are keeping up with this quite well but I know I will hit a low and not want to wear some of them but also will have to commit to my agreement and toss it if I don’t wear it.

I will keep you up to date and would recommend most of you women should probably try this out and see how far you get before you simply don’t want to wear that shirt you bought awhile ago and only worn once.

Moment of Truth: Sometimes you simply don’t like your style after you have a baby and have to re-shop for the latest trends.

Split Pea Soup

Ham and Split Pea soup! Yummy yum yum! Great for a day such as today when the weather cools down, a soft mist of rain comes through and you just want something comforting.

Ingredients:

  • 1 bag of split peas
  • 1 ham bone
  • ½ diced onion
  • 2 tbsp minced garlic
  • 1 medium carrot, chopped (optional)
  • 1 bay leaf
  • ½ tsp garlic salt
  • Salt and pepper to taste
  • 2 cups water
  • 1 quart chicken broth

In a crockpot add all ingredients and cook on high for 4-5 hours or on low for 8 hours.

You can’t go wrong with split pea soup especially when served with my English Muffin Bread toasted.
