Mediterranean Chicken

I have been making this recipe for years and this recipe is still one of my most favorite meals. I absolutely love and adore this recipe. It’s a top hit with all our friends and family as well and mind you, this is the easiest recipe to date. It will blow your socks off.

It seems as of lately, I have had to step up my game with my sister and her weekly attendance at our abode. She has been seeking and searching for goodies and has officially been spoiled. This was on our lunch menu one afternoon after a long morning of swimming and walks to the river.

It was very satisfying and made everyone quite happy.

Ingredients:

  • 1 medium Onion, yellow or red, chopped
  • 1 tsp sugar
  • 2 Cups Diced Tomatoes
  • 1/3 Cup EVOO
  • 1/2 cup freshly grated Romano Cheese
  • 4 chicken breasts
  • Garlic salt
  • Paprika
  • Cumin
  • Salt and Pepper
  • 1 1/2 Cups Gorgonzola Cheese Crumbles

In a skillet, add a smidgen of EVOO, onions and 1 tsp sugar for a little caramelization.  Slightly saute just until barely tender. Remove from heat and place in a small bowl to cool.

Once onions are cooled, add tomatoes and 1/3 cup oil.

Toss tomato mixture with Romano Cheese and refrigerate until needed.

Meanwhile, cook chicken breasts either in the oven or pan fried; whichever you prefer. Season breasts with a generous amount of garlic salt, paprika, cumin, salt and pepper. Cook until no longer pink.

Once breasts are cooked, top with a generous scoop of the tomato mixture and sprinkle with Gorgonzola cheese.

Pineapple Bacon Sausage Sandwich

Oh how I absolutely love grill season. Especially now that I do not count on my husband anymore. “I can do it myself” I proudly think to myself. No more waiting around for him to get home from work; now I can have dinner prepared before he gets home. Yahoo!

I bought these sausages from Costco but you can purchase them pretty much anywhere. They are precooked and have sweet pineapple and juicy bacon wrapped inside them. This grilled juicy sausage leaves for a crispy outside with extreme juice flowing on the inside. Oh my goodness, is your mouth watering yet? Yummy yum yum!

Literally three ingredients is all you need. It is that easy. This meal is a 15 minute quick dinner (with the potatoes, 45 minutes).

From refrigerator to belly in a 25 minuets depending how quickly you gobble down your feast.

The simplicity of it all brings out the flavors of the sausage, leaving this goodness– plain and simple.

Serve on a ciabatta roll which makes this even more delicious.

So here’s the scoop:

Ingredients: 

  • 4 Sausages, defrost if necessary
  • 4 Ciabatta rolls
  • Smidgen of Mayo

Grill the sausage on BBQ- if weather appropriate. I wouldn’t want you all standing outside in the rain and snow to enjoy a delicious sausage sandwich. You could also broil in the oven, boil or microwave though I’m least partial to the ladder.

Lightly toast your ciabatta rolls on the grill (or oven) and spread with a little mayo.

Slice the sausage lengthwise and lay flat on your buns. :) Viola, that simple! Really it sounds very unexciting but a good sausage brings a lot of flavor to enjoy and not be disguised by multiple ingredients. It is really delectable.

Than…. sit on your back porch and enjoy a beautiful sunset. While I was up visiting family, this was a similar meal we had and this was the scenery I was able to gratefully partake in.

Creamy Potatoes

This past couple weeks has been so unbearably hot. So hot that the thought of cooking is not appealing whatsoever. I’ve decided to do as much on the grill as possible without having the same meals repeated. Not the easiest but can happen with creativity. These potatoes came from the grill and landed in my mouth with a great big smile upon my face.

I can’t express to you the great joy of hanging out with my family and sitting on the back porch enjoying so good food and even more, great family time. And this my friends, has been what our summer is all about.

Ingredients:

  • 1 lb red potatoes, chopped
  • 1 onion, chopped
  • 1 bushels of green onions
  • Salt & Pepper
  • Garlic Salt
  • Parsley
  • EVOO
  • 3/4 cup ranch

Like Father like son. They are twins in every aspect.

Dice potatoes and onions. Season with a generous amount of salt, pepper, garlic salt and parsley.

Add in green onions.

Top with EVOO and ranch dressing.

Mix together and compile onto a foil lined vegetable grill basket (or place foil directly onto grill).

Grill for about 15-20 minutes until tender but still has a bite.

This is great with any main dish. Tonight we had this with Applewood Sausage.

Bacon Wrapped Sausage

These bacon wrapped sausage dogs are making my mouth water as I simply sit to write out this recipe for all of you gracious people. This recipe even first thing in the morning will bring satisfaction to my palette. It’s a great meal for the warm summer heat surrounding your backyard and your barbecue with good family conversation while the kiddos play.

Ingredients:

  • 4 Italian Sausages
  • 8 slices of bacon
  • 2 cups mushrooms, sliced
  • 1/2 onion, diced
  • 1 tbsp minced garlic
  • 4 hot dog buns
  • Garlic butter

Turn your barbecue on and allow the heat to begin to smell your backyard and all across town making a statement that it is barbecue season and we are making delicious grub.

Wrap each sausage with two slices of bacon. Hold together with a toothpick if needed.

Meanwhile, saute mushrooms, onions and garlic until nice and tender. Set aside.

Prepare to grill the goodness.

Allow the juices to run off and sizzle the grill. Ohhh the smell of barbecue, oh how I love it.

When sausage is done, butter your buns with garlic butter and lightly toast on the grill.

Top each sausage with a portion of the mushroom mixture.

Grilled Pork Chops

We decided to grill pork chops the other night as neither of us have done this before. We went for a LONG walk through the woods on a trail that followed the river. It was the best walk! It was not too hot and Cooper was so excited to keep up with the water and see waterfalls along the way. Ending at a viewpoint, we took him out on the cliff to let him watch the boats zoom by. He enjoyed watching this as he hasn’t ever seen boats in action before. It was really fun to watch him light up as he soaked in this new experience. As we walked back, it was 7 pm before we arrived home. So we decided to do a quick dinner with pork chops and grilled vegetables.

It amazes me how you can have an incredible meal in such a short period of time. The barbecue has become my best friend. :)

Ingredients:

  • 4 Pork Chops
  • Garlic Salt
  • Salt & Pepper
  • Montreal Seasoning (optional)
  • Fresh green beans
  • Fresh Corn
  • Fresh Edamame beans
  • EVOO

Sprinkle the pork chops with salt, pepper, garlic salt and Montreal seasoning. In a vegetable basket for the grill, add in your vegetables and toss with EVOO, salt, pepper and garlic salt.

Grill both the chops and the veggies until pork is still tender, being careful not to over cook.

Simple as that! Eat, drink and be full!

Grilled Mahi and Corn on the Cob

Grilled Mahi and Corn on the Cob. Easy, delicious, healthy and most of all…..easy clean up.

I’ve become quite the grill master lately and have really enjoyed it. Makes your food taste great and is easier than I had expected.

This is a meal the whole family with love, as you can see, my little boy loves it as well. :)

Ingredients:

  • 4 Mahi fillets
  • 4 Corn on the cob, shucked
  • 1 White or Yellow Onion, sliced
  • Dill
  • Garlic Salt
  • Salt & Pepper
  • EVOO
  • Butter

As you can see I didn’t give exact measurements for the seasoning. I prefer to do seasoning to desired preference. Also, depending on the size of the fillet you may want a little more or a little less. :)

For easy clean up I wrap each corn and fillet individually in foil to allow for the flavors to seep in and stay concentrated.

Sprinkle corn with salt, pepper and garlic salt. Top with a chunk of butter and sprinkle with EVOO.

Fold foil up in somewhat of a dome. This will give easy access to check and see if the corn is done without losing all your juices.

Slice onion and sprinkle seasoning on top of Mahi. Lay onion on top and drizzle with EVOO and chunks of butter. Fold up into a dome.

Grill corn first as it will take significantly longer. Once corn is half way grilled begin cooking the fish for 5-8 minutes (depending on size) making sure not to overcook. You will want the fish to be flaky, this means it is done and not over cooked or under cooked.

Once done, open up and enjoy the aroma and enjoy this luscious, healthy meal.

Bacon Stuffed Chicken

Bacon Stuffed Chicken. Similar to Cordon Blue but way better, I took the initiative to grill this up as I have found a new enjoyment in barbecuing lately. Although there are only so many things you can grill without making chicken more than 3 times in a week the same way, I wanted to take the opportunity to spice it up a bit. I choose to stuff chicken breasts like you would Cordon Blue, but because I had no ham, I turned to bacon, our true friend! :)

The weather was impeccable! While the chicken grilled, Cooper and I would take time to step away and water the garden we’ve been working so hard on.

Still not gathering the concept that once we dug the hole, buried our seeds and recovered the hole, doesn’t mean to uncover the seeds again. Sweet baby makes me laugh. I’ve thoroughly enjoyed the attempt to grow our garden together.

After the chicken and garlic covered beans were done, Cooper and I sat on the back porch together enjoying the weather and eating our delicious meal. Michael got home late from work and was so happy to see such an amazing meal in front of him that looked as if I slaved over it for hours. Though it looks complicated, its is extremely easy to prepare and the grill does most the work.

Ingredients:

  • 4 chicken breasts, sliced open
  • 8 pieces of bacon
  • 4 slices of Pepper Jack Cheese
  • Garlic Salt (optional)
  • Paprika (optional)
  • 1 lb Fresh Green Beans
  • EVOO
  • Garlic Salt

Prepare chicken by slicing open leaving one end still connected. Stuff with raw bacon and cheese. To hold shut pin together with three toothpicks. IMG_4168

Season the top of the chicken with garlic salt and paprika.

Grill until no juices flow clear. Be careful not to over cook.

Gorgonzola Grilled Chicken

I decided since my husband was outside doing yard work and Cooper was playing in the dirt and watering flowers that I should learn to BBQ. I love this easy recipe and really wanted to grill the chicken as we have been in a heat wave lately that starting the oven was last on my ‘to do’ list.

I grilled two chicken breasts and three jalapeño sausages. This was a great way to learn how to grill. I got the chicken extremely moist and was so proud of myself. Cooper at chicken and sausage which made the night even better.

I have been making this recipe for years and have really enjoyed how refreshing it is but this was the first time I have made it will grilled chicken and to be honest, this was probably the best way. :)

Ingredients:

  • 3 chicken breasts
  • 1 large tomato
  • ½ red onion, diced
  • 1- 8oz container of gorgonzola cheese crumbles
  • EVOO

Grill the chicken and while the chicken is cooking chop onion

Add about 2 tbsp. of EVOO and toss with gorgonzola crumbles.
