Meatball Subs

For some reason I have been CRAVING meatball subs and not just your typical meatball sub but the unhealthy version. For some reason I have really wanted Subways meatball sub and I honestly can’t tell you why. But…..since I try to avoid eating out as homemade meals are healthier for you and all around simply taste better, I chose to make my own for tonight.

Now what I mean by unhealthy meatball subs is that I want everything on them as subway provides; mayo, cheese, pickles, lettuce and onions. Mmmmm makes me salivate just thinking about it. I have the bread baking as we speak and the crockpot simmering while I simply wait for dinner time to approach. The snow is falling in the back ground as it is an extremely cold day and our snow storm has finally hit. :)

There are two ways you can make meatball subs and honestly both are great. The first exciting way is the way I prepared them tonight, already prepared meatballs and homemade sauce (you can use prepared sauce but frankly I don’t like the taste). Sounds easy right? Well it is! :) The second way they can be served up is with homemade meatballs and homemade sauce. I’ve done both but for a quick dinner in the crockpot I make my own spaghetti sauce and added the meatballs. Let them simmer all day on low and served over my homemade English muffin bread (click here for recipe). Kind of like an open face sandwich.

This versatile meal helps in a pinch when you are not sure what to make but know everyone will enjoy.

If making your own meatballs and sauce follow the directions below beginning with the meatballs as they take longer.

Ingredients:

Sauce:

  • 1 16oz can olives, chopped
  • 1 pint cherry tomatoes
  • 8oz fresh mushrooms
  • 1 small onion, chopped
  • 1 6oz can tomato paste
  • 2 cups water
  • 1 tbsp. Parsley
  • 1 tbsp. Italian seasoning
  • 2 tsp Oregano
  • 3 tsp garlic salt
  • Salt and pepper to taste
  • Dash of Paprika
  • 3/4 tsp sugar (to taste, but add a little at a time as you can’t undo the sweetness)

In a fry pan add a little EVOO and cherry tomatoes and begin to cook on medium heat. Meanwhile chop onions and add them to the tomatoes.

When the tomatoes begin to burst add the mushrooms.

Add a small palm full of sugar to help caramelize the onions a bit.

Once tomatoes fully burst add olives and transfer to crockpot.

Add tomato paste and water. Mix well and add parsley, Italian seasoning, oregano, salt, pepper, garlic salt and a 1/2 tsp sugar. Mix well, taste and decide if the remaining 1/4 tsp of sugar needs to be added.

Let simmer for 4-6 hours in crockpot on low heat.

Meatballs (if making your own):

  • 1 lb ground turkey or beef
  • 1 yellow onion, finely chopped
  • 1/2 cup soda crackers, finely crumbled
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 2 tsp garlic salt
  • 1/4 cup ketchup
  • 2 tsp Worcestershire sauce
  • Salt and pepper

Begin chopping the onions and crumbled the crackers. Set aside.

In a large bowl or kitchen aid mixture combine raw meat, with remaining ingredients. Mix thoroughly.

Preheat oven to 400 degrees. Meanwhile use a cookie scoop to form your meatballs and place on a rimmed, foil-lined baking sheet OR if you don’t have a cookie scoop you can lay foil on your cookie sheet and spread out the meat until fully flattened; about 1 inch thick. Take a butter knife and lightly cut 1 inch squares and form into balls. My mom taught me this trick as it’s easier to do rather than dig into the bowl and get extremely messy trying to make all your balls uniform.

Bake at 400 degrees for 20 minutes or until no longer pink. Place in the crockpot and cover with the sauce from above and let simmer on low for a couple hours to help soak up all the flavors.

When serving, butter your bread and/or rolls and broil until lightly crispy. Place meatballs and sauce on top and sprinkle with cheese and broil for another 1-2 minutes until cheese is fully melted and bubbly.

Creamy Chicken and Corn

Crockpot meals tend to never look pretty but give your tastebuds complete fulfillment. In my perspective they actually are beautiful disasters; beautifully ugly! This meal was unbelievably easy and a great change in chicken. I got this meal from my sweet sister Kristen who prefers tasty yet simple meals. This one was a keeper.

I have been on a salad kick since Christmas. My mom made a killer salad bar multiple times during Christmas as a side dish. It was so amazing I continued to do this since we’ve been home and have yet to become sick of it. Basically the salad consists of:

Salad:

  • Mixed Greens
  • Diced red, yellow and orange peppers
  • Sliced mushrooms
  • Candied Walnuts
  • Chow Mein noodles
  • Sunflower seeds
  • Dried cranberries
  • Croutons
  • Lite House Chunky Blu Cheese

Seriously amazing and filling.

Creamy Chicken and Corn:

  • 4-5 chicken thighs
  • 1 can corn
  • 1 can black means
  • 1-2 cups salsa (I add more for the spice)
  • 1 8oz package of cream cheese
  • Rice

Combine chicken, corn, beans and salsa in the crockpot and cook for 4-6 hours on med-low heat.

30 minutes before serving add the cream cheese and allow it to melt and mix thoroughly.

Remember crockpot meals are never pretty but the beautiful taste is what makes them glorious and always a return meal.

Prepare rice and serve over rice.

Sausage and Lentil Stew

It has been SO cold in the mornings lately that I would rather lay snuggled in bed for hours. Unfortunately mommy duty calls and that luxury doesn’t happen.

My crockpot has been my best friend and always will be during the winter season. Makes meal time so easy and provides great dinners.

Ingredients:

  • 1 yellow onion, chopped
  • 2-3 large carrots, chopped
  • 1 large green pepper, chopped
  • 3 cups water (Chicken Broth)
  • 2 tbsp Chicken Better than Bullion (omit if using chicken broth)
  • 2 cups Red Lentils
  • 1 lb Kielbasa Sausage
  • 1 tbsp Parsley
  • 2 tbsp Italian Seasoning
  • 2-3 tsp Garlic salt
  • 2 tsp Chili Pepper

Directions:

Chop onion, carrots, pepper and sausage. Add to crockpot. Dump in water, better than bullion and red lentils. Stir well and add seasonings. Viola! That easy!

Leave on low heat for 6-8 hours or high heat for 4-5 hours.

Serve with Bread, pasta, soup, or by itself.

Forgotten Jambalaya

I must be enjoying the fall season to it’s fullest as I’ve really been using my crockpot almost everyday. Isn’t the crockpot the best invention though, I mean honestly, you can have a delicious yummy meal without a ton of work, but portrays a “slaving” meal. It’s great!

I have decided I would try a couple new things this week and actually write out my meal plans for two weeks. Yes TWO weeks. I am not sure how this will pan out but today is Wednesday and I have been on this since Sunday. I figured I would see if it helps me from impulse buys at the store and would also keep me from returning to the store multiple times throughout the week as I decide what to make and need the last minute run. This plan, I am hoping, will help save a few bucks and keep me to the task of making meals I talk about but resort to something else.

Tonight I made jambalaya as I love my mom’s Jambalaya and some of the recipes I’ve seen before require you to add rice to the pot. I do not prefer this as it can make for terrible leftovers and soggy rice. Yuck!

Ingredients:

  • 2 cans diced tomatoe, undrained
  • 2 cans chicken broth (I use Better than Bouillon)
  • 2 cans tomato paste (6oz each)
  • 1-2 medium diced green pepper
  • 1 medium diced onion
  • 3 celery ribs, chopped
  • Minced garlic
  • Splash of Parsley
  • Splash of Basil
  • Splash of Oregano
  • Dash of salt
  • ½ tsp cayenne pepper (optional, I enjoy a little spice)
  • ½ tsp chili powder (optional, I enjoy a little spice)
  • 1lb boneless chicken breast cut into chunks
  • 1lb smoked sausage cut into chunks (I used Costco Hot sausage)
  • ½ lb uncooked medium shrimp, peeled and deveined
  • Hot cooked rice

In the crockpot, combine te tomatoes, broth and tomato paste. Stir in green peppers, onion, celery, garlic, and seasonings. Add chicken and sausage. (Leave shrimp out as it only takes 20-30 minutes to cook through)

Cover and cook on low for 6 hours or until chicken is tender. 30 minutes before serving add shrimp, stir well and cover crockpot for remainder of cooking.

In a rice cooker while shrimp is cooking, add rice as they will be done roughly the same time.

In a large soup bowl add rice and top with Jambalaya. Serve with artisan bread and/or salad.

This is probably the best recipe I’ve had for Jambalaya. My mom has made this for years.

Creamy Chicken Sausage over Rice

Due to the rain the last couple days I wanted something warm and comforting for dinner. Something cozy for days like this is always satisfying to my palate. Although with moving I haven’t had a lot of time to plan meals while taking care of our 11 month old. It seems our cupboards and refrigerator has become quite empty lately.

I must say after the heat the last few weeks, I do enjoy a cool day to bring our household temperature back to 68 degrees. Living in Portland it is not very common to find homes with AC, because it’s truly only needed at most a couple months out of the year. Those couple weeks make AC worth every penny in my opinion. Although I did grow up in central Washington where AC is like water; you find it in every home. Anyway, since the heat decided to take a backseat today, I set aside the summer pasta salad, fruit salads, and BBQ recipes and took every opportunity to make something warm and use my Crockpot to pretended it was Autumn outside.

Going to the grocery store has been very unexciting to me lately and I have been avoiding this for awhile. I just haven’t quite been feeling up to it with all the errands I’ve been running lately, and moving has become very taxing on me, or shall I say my son. I get more excited to rush home and put little man down for a nappy-poo (aka nap).

We have two weeks until we are officially out of our current home. This has been a bit harder for the hubby than for me, due to the attachment and the reality that he has lived here four years longer than I. Although it is our first home together and as a family it will be bitter sweet.

Anyway, this afternoon I decided to throw a frozen chicken breast in the Crockpot unsure of what I was going to make but figured this had to be a good start for something tasty. You can’t really go wrong with seasoned chicken. As the afternoon progressed I decided I would throw a couple apple sausages from Costco in there as well, and at that point I knew dinner absolutely couldn’t go wrong. First, the crockpot is my best friend especially on busy days. Second, I love sausage and could eat it every day of the week and well, chicken is a staple for most households who are animal lovers.

This meal is super easy and truly takes no time at all. Quick and delicious.

Ingredients:

  • 1 Chicken breast
  • 2 Apple Sausages
  • 2 cans Cream of Chicken
  • ¾ cup plain Greek yogurt
  • Rice or Egg Noodle Pasta

Seasonings:

  • Garlic
  • Oregano
  • Italian Seasoning
  • Hint of paprika

Throw all the ingredients into the crockpot except greek yogurt and rice/pasta. Once cooked (4 hours on low heat), shred chicken and cut sausage into small pieces. 15 minutes before serving turn the crockpot on warm and add yogurt and heat through. Serve over rice or egg noodle pasta.

I served this over rice tonight and had a fresh cut salad with beets, radishes, orange, yellow, and red peppers, cubed cheese and croutons with delicious honey mustard dressing. It was the perfect meal for a cool, rainy afternoon.
